I was skeptical about this recipe but I had some tofu that I needed to find a use for or throw away. We found out we are not fans of tofu. You can not tell there is tofu in this recipe, the texture is creamy and the flavor has a nice bite to it.

Chicken Alfredo Biscuit Casserole

Mom and Husband loved it. Hubby looked up after cleaning his plate and said NICE!. The top of the biscuit is crunchy and full of flavor the bottom half of the biscuit is gooey. I was not a fan of the gooey part so I cut that part off and ate around it. The casserole had good flavor. Judging from my husbands reaction I will be making this again. Easy recipe to follow and prepare.

Chocolate Pecan Pie II

This never firmed up in the center, I beat the eggs until they were very very thick and followed the directions completely. The saving grace of this pie was the crust I made up( the reason I wanted to make a chocolate pie). The top layer just feel a part as soon as you stuck a knife in it to cut it. Didn't bake through and the end results was less then pretty.

Bread Pudding With Caramel Sauce

I made this twice this week, the first time I burnt the caramel and made it with out it. The pudding was so good I made it again and didn't burn the caramel. I used 3 day old dry Italian loaf on the first one and it soaked up the egg mixture very well and was a very moist and flavorful result. The 2nd one was not as old and crustier and didn't soak up the egg as well giving a drier result. Both times I had more then half the egg mixture left over so the next time I make this and I will make it again I am going to cut the measurements on the egg mixture. So very good!
