Do you ever do something and then forget where you did it or left it. Well I am having one of those moment right now. I am hoping one of you is going to help me find it.
I created a dish this past month that we really liked and I will want to make again. I KNOW I wrote it down. I remember writing that I hadn't taken a picture and I wish I would have because it ended up being so good. I included how I plated it and
I called it Chicken and Pasta in Cream Sauce. I know it sounds so original.
I am absolutely laughing at myself right now. As soon as I started writing this I remember exactly where I wrote this recipe down at. I am still going to post this little blog, I am sure a few of you will enjoy a good laugh from this. A few of you
may even enjoy the recipe.
Chicken & Pasta with a Cream Sauce
2 Chicken breast halves
3 TBS butter
3 cloves garlic minced
1 TBS lemon juice
1/2 cup white wine or enough to cover entire bottom of pan about 1 inch.
2 TBS butter
2 TBS flour
1 c light cream
1/2 to 1 cup shredded parmesan cheese
!/2 box thin spaghetti cooked
about 12 grape tomatoes cut in half
3 or 4 green onions chopped
Fresh basil ruffly chopped
Pre heat oven to 400. Place chicken in an un greased 9 by 13 baking dish pour wine and lemon over the chicken, add the garlic and divide butter into patties and place on top of each chicken breast season to taste cover tightly and place in heated oven. Bake
for 30 minutes covered and 30 uncovered or until meat is cooked through. Remove from the oven and let sit 5 minutes.
Place chicken on a dish and keep warm. In a medium frying pan or
saute pan melt 2 TBS butter add flour and cook til smooth and bubbly. Pour the juices from the baking pan into the flour mixture stirring very quickly, add the light cream a little at a time stirring the entire time keep adding until you get the texture you
want. Salt and pepper to taste add in Parmesan cheese and remove from the heat.
To plate place pasta in a large bowl and add the tomato, onion,& basil toss together with the pasta. Place a healthy serving on each plate and add slices of chicken breast on top of pasta mixture and then cover generously with the cream sauce.
I have a group on face book that I just started for sharing recipes that you just
want people to see with out worrying about being approved or blue ribbons or other such stuff. There are about 60 people in the group so far and maybe 4 recipes 2 of which I put there. So I will say it is not the most successful group ever but the idea is
a good one and does have the possibility for fun . Any way that is where I put this recipe.
