St Patrick's Day Casserole

I used this for my St Pats leftovers and it worked out really well! I wasn't a huge fan of the Filo dough with it so next time I think I'll try a sheet of crescent rolls or something along those lines.

Victor's Shrimp Fried Quinoa

Will definitely make again but next time will cut the corn and peas in half. I will also add the onion (vidalia, not green) later than suggested since I prefer my onions al-dente in dishes like this.

Brown Rice and Black Bean Casserole

Ez, tasty, and nutritious! I went ez on the spices by just using a pinch or so it was enough to give it a tad bit of kick without overwhelming. I'll definately make again but might use 1/2 chicken breast, 1/2 chicken thighs.

Turkey and Quinoa Meatloaf

like quiet a few other people, wasn't a fan of the topping but the loaf itself was surprisingly tasty! I might try a topping such as cranberry pepper jelly or something sweet but lite like that.

Super Easy Slow Cooker Chicken

this was a tasty EASY meal to make. Just be careful not to overcook or the chicken dries out. 3 Hrs max. I used fresh mushrooms, 3 T sherry ( a replacement for Marsala), and served over angle hair pasta. Yum

Stuffed Peppers

This was a good base recipe. Next time I'll add another can of sauce, add a few red pepper flakes, use brown rice instead of white, and add real onions and maybe some celery. I like my peppers a little more tender so I would cook a little longer too.

Creamy Italian Slow Cooker Chicken

Not bad! I cooked the chicken in the italian dressing along with the butter and I think next time I make it I will not include as much sherry or cream cheese. The sherry was a bit overpowering and the cream cheese made it a little more richer and personally, not worth the added calories.

Pumpkin Pie French Toast

has potential but needs to be tweaked. next time i'll double the topping, adding 1/2 in with pumpkin mix. i'll also add milk as i found it to be dry and i like soggy french toast.

Slow Cooker Cranberry Pork

yum, yum, YUM! I didn't have any french dressing on hand so I used another suggestion and made the Outback Tangy Tomatoe dressing (without the sugar), used a can of jellied cranberry sauce, and added about a 1/2 C of dried cranberries. WOW. surprisingly really good stuff.

Chicken and Red Bean Enchiladas

Other than adding a heaping tablespoon of jalapeno peppers (canned), I followed the recipe to the T and to my surprise, it was EZ, extremely tasty, and best of all, went over huge with the fam.
