Magic Cookie Bars I

I started making these several years ago. Our FAVORITE combination though is to use all butterscotch chips and slivered almonds. I use 2 cups graham cracker crumbs too for a thicker crust, chips, coconut, nuts then top with the condensed milk. Everytime I've taken these to a party or potluck, they disappear faster than the chocolate ones.

Balsamic Bleu Cheese Salad

I've been making a similar salad to this for several years and I've been asked to bring it to potlucks. I only use mixed greens, and don't use the lemon juice. However, I do had a thin sliced apple (fuji, gala, etc). This really adds to the flavor. I do season the balsamic dressing with a little salt & pepper. EXCELENT!!!

Christmas Breakfast Sausage Casserole

Not sure how anyone could give this a low rating and say it was bland. This is the best, even without the changes. Per several other reviewers, I upped the eggs to 6 and used Maple Sausage (Jimmy Dean). I mixed in 1/2 cup each chopped green onion and red pepper and added about 1/4 tsp red pepper flakes for a little kick. We just gobbled it up this Christmas morning.

Bill's Blue Cheese Dressing

I have made this several times over the past year and it is by far one of the best blue cheese dressing recipes I've found. My husband and I both love it. I've made it with Danish Blue, Stilton, and Gorgonzola and all were tasty. I did lighten it up by using light Sour cream and light mayo, but after a few days, it turns sort of runny (haven't figured out why yet)- still tastes good though. I also added a 1/4 cup fresh grated Regiano parmesan cheese that really enhances the flavor.

Alyson's Broccoli Salad

I took to a potluck at work and it was the first thing gone. I didn't have any raisins so I substituted 'Craisins' (sweetened dried cranberries) and used dry roasted salted peanuts instead of sunflower seeds. Everyone wanted the recipe - and it's so easy.

Garden Veggie Pizza Squares

I've made a similar recipe for several years now. I add 3/4 c light mayo to the cream cheese and dressing mix and instead of carrots, I use cauliflower and top it with mushrooms and grated sharp cheddar. I am required to bring these to every potluck at work. There is never any left.

Easy Beef Stroganoff

I was looking for a recipe similar to the Rice-A-Roni stroganoff that was recently discontinued. With a few modifications, this recipe fit the bill. I sauted the onion and hamburger together, adding a couple cloves of minced garlic, leaving out the butter. Just as the hamburger started to brown, I added a can of sliced mushrooms and continued to cook. Once the hamburger was brown, I deglazed the pan with some dry sherry, then, instead of adding flour, I added the beef broth, brought it to a boil and added 1 cup of minute rice and half the sour cream. Brought it up to just boiling, covered, reduced heat and simmered 10-15 minutes until the rice was done and it started to thicken. Right toward the end, I added the rest of the sour cream. My husband loved it. It will definitely be made again.

Fresh California Salsa

I reviewed this a couple years ago, but decided to upgrade my rating. I just made this with some garden tomatoes a friend gave me. I don't really measure anything. I threw the garlic, onion and cilantro in the food procesor and pulsed it a few times, then added the seeded chopped fresh tomatoes. Salt, lime juice and a 1/2 tsp of cumin and this is the best one I've made. Oh, I did up the jalapenos to 3,seeded, but w/ the membrane. We like it hot. Garden fresh tomatles make such a difference in the flavor.
