Blueberry Popovers

After reading previous tips, this recipe actually serves 12 so I divided the butter into fourth's (cause I just couldn't make myself put in that much butter) and put one in each cup and only filled each tin 1/2 way. I did not think it was too eggy. Thought it was very similar to a mini version of German Oven Pancake. I opted not to do the cinnamon sugar topping but will try next time. I also, by accident, baked it at 375 the whole time which I think helped it not be as runny as others had mentioned. Turned out beautifully and tasted yummy! I'm keeping it in my recipe file. :)

French Leek and Ham Shepherd's Pie

My family was pleasantly surprised how much they liked it. I was looking on how to use up my pork roast and subbed it in for the ham. I did not have any leek on hand. The rest of the recipe I followed and it was a perfect quick hit! Thanks!

Crumb-Coated Chicken Thighs

I thought it was very tasty and surprisingly enough crunch to satisfy my fried chicken cravings. My teenage son liked it too. I took the advice of needing to make it 1 C of bread crumbs but since I only had 1/4, the next best thing I had on hand was Flax Plus cereal. So I added 3/4 C cereal. I also added the 1 tsp of garlic powder but just realized I forgot the curry. I will try this again.

Easy Cassoulet Casserole
