Sam's Famous Carrot Cake

It turned out really well. I made it exactly as the recipe said. I did have to cut the bake time down to about 45 minutes for a dark non-stick coated metal 9x13 pan. (I have a new oven and haven't checked it- it may run hot). I used half a recipe for the cream cheese II frosting from this website. It's good cold the next day (kept in fridge due to cream cheese frosting)

Mary's Meatloaf

My whole family loved it- even my 1yr old and 3yr old! I took the suggestions of others and used 1/2 cup of oatmeal instead of the bread cubes. I also used a little onion powder instead of chopped onions- because my family isn't a big fan of finding pieces of onion. Will be making it again.

Simple BBQ Ribs

Delicious! So easy and so good! I love them with Sweet Baby Ray's Honey bbq sauce. The boiling first and cooking covered at a low temp make them so tender. I used a boneless rib- and it was falling apart like pulled-pork. They were just as good, if not better, warmed up the next day!

Banana Cake VI

Love this recipe! Such a heavy moist cake. (I found that I had to bake it longer than the hour- but maybe that's just my oven and using an air bake pan) I also made only a 1/2 batch of the frosting and found that to be plenty. I kept the cake in the fridge and served cold. Today, I will be serving it with cool whip instead of the cream cheese frosting.

Butternut Squash Soup

Now I have never once had butternut soup- so I don't have a baseline. I had many butternuts in the garden this fall- and was looking for a way to use them. I used 8oz of reduced fat cream cheese and found that it is still very thick and rich- could probably use only 4oz. I also had some opened chicken stock to use instead of bouillon. I also used a pinch of oregano since I did not have any marjoram. Next time- I will be roasting the squash first in order to make cutting it easier- I think I bruised my hand with the knife!
