About this Cook
I really like to cook - but not to bake....hmmm, does that make sense? I like to go out to eat and to try new things so I can go home and replicate them. I guess you could say it's my hobby. My new thing now is to include as much heart healthy foods into my diet, so I'm making stuff like quinoa and barley. I try my best to avoid "white" - sugar, flour, rice and pasta. Lucky for me I have the least picky family on the planet - especially my husband - who are open to eating new things and supporting my new eating plans.
My favorite things to cook
I like to cook dinner. I try to figure out what I'm making in the morning, so I can shop and prepare it in the afternoon. I spend more time than I should reading recipes and grocery shopping. I should plan meals in advance and shop all at once, but I've never succeeded when I've tried.
My favorite family cooking traditions
Huh? If I stuck to my family cooking traditions we'd be eating Roast beef every Sunday, Chili on Monday, Chop Suey on Tuesday, Swiss Steak on Wednesday, Broiled Steak on Thursday, Hamburgers on Friday, and Beef stew on Saturday. "Eat Mor Chikin"

My cooking tragedies
OMG - if any one reads this, my cooking tragedies have happened when eating my MOTHER-IN-LAW's cooking. 1. The time MIL made me pancakes and used baking soda not baking powder, and I tried choking them down to be polite - but didn't succeed. 2. The time MIL made blueberry pie, sticking all the ingrediants in a pie shell (not stirring them). One person got a piece of pie with a cup of sugar in it! 3. The time BIL shot a deer and gave MIL deer meat. Mmmm, tacos made with unseasoned deer meat, and deer roast with a packet of Lipton's onion soup mix sprinkled over top. 4. Frozen corn cooked stoptop with enough water to fill the brim. 5. Oh, I'll think of more!

Pumpkin Chiffon Pie
What this recipe is lacking is instructions! The gelatin has to be dissolved in boiling water, the filling needs to cool before adding the eggs, and the eggs need to be REALLY stiff before folding them into the pumpkin mixture. I used 3/4 cup of sugar and still found it a bit too sweet, and used 1/2 tsp salt to balance it. I used cinnamon, ginger and cloves for spices and pasturized egg whites. LOVED it - reminded me of the pie my Aunt made when I was a kid!

Thai Peanut Chicken
Mmmmm. I did alter...like others I did double the sauce, used low sodium soy sauce and unsalted almond butter - (due to peanut allergy!) and served over rice noodles - unsalted. Get it??? read the reviews and was concerned about it being too salty!!! It wasn't!!! Used rice vinegar, and was generous with saki (rice wine) to deglaze pan and to thin the sauce - it does get quite thick. Fried chicken, then veg (brocolli, red pepper, green onion, carrots), both separately. Just before serving heated chicken, veg, and sauce all together,diluted with the saki. Used 2 tsp of Thai chili sauce rather than cayenne for a real nice bit of heat! Used a total of 2 tbsp of garlic and 2 tbsp of ginger - I wouldn't leave either out of the recipe - really key ingredients! SECRET TO THE SAUCE NOT THICKENING IS TO ADD MUSHROOMS TO THE RECIPE!!!!
