Zucchini and Potato Bake

Reviewed: Jan. 25, 2014
This was a nice alternative to boring old French fries, or steamed vegetables. I would add some quartered mushrooms and onions. Only reason I gave four stars is because at 400 degrees, this doesn't take an hour at all. I set the timer for 45 minutes and it was done in about 35. Great side dish

Ground Beef Shepherd's Pie

Reviewed: Jan. 23, 2014
Never had shepherd's pie before, but have been wanting to try for a long time. This was a great recipe. Even the kids loved it. As I had no canned or frozen veggies on hand, I used some diced yellow and green squash for the vegetables. I doubled the amount of potatoes as I figured two would not be enough. Glad I did! I blended the potatoes with the egg and water and added some pepper and folded the cheese into them as well. Also, after reading reviews, I added garlic salt and brown gravy (from a packet) to the meat mixture. It made it much more flavorful. The only thing I will change in the future would be to not add the egg, as it made the potatoes more fluffy, but turned the dish into mush. I didn't get the desired crust from them. Also, I had to cook for an additional ten minutes and it still did not brown. When I try again without the egg, maybe it will take less time to crust. Great recipe and very versatile!

Ham and Potatoes Au Gratin

Reviewed: Jan. 23, 2014
Great, filling recipe. This took longer to cook than the recommended time. I doubled the recipe, using a larger dish, but it took almost twenty mins longer. Otherwise, it was a great dish that could stand alone, though I served it with steamed yellow and green squash. Could also use leftovers for breakfast or lunch the next day!

Slow Cooker Sausage with Sauce

Reviewed: Jan. 23, 2014
Love, love, love this recipe. Super simple and a great hit with the family! The only thing I did different was putting the slow cooker on high for the first two hours and turning it down to low for the other four hours. Turned out great! The sausage almost fell apart. Will definitely use this one again!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Jan. 23, 2014
This was great! My husband and even the kids loved it. After reading other reviews, I omitted the flour also, and sliced the chicken breasts in half length wise. I pounded them out a bit as well. I followed the sauce recipe, only adding another tbsp of butter to add depth and take a bit of the bitterness out from the vinegar. I reduced the sauce a bit longer as well. Really great, and would do this again maybe using Portobellos too.

Ricotta Gnocchi

Reviewed: Jan. 17, 2014
Great recipe. Took less prep time than I thought it would and tastes great. Even my ten year old loved it! I did alter a few things though. I pinched pieces of dough and rolled in the palms of my hands instead of rolling and cutting as called for. I used only two tbsp. of the olive oil for the sauce, even though you could really use even less. I added a bit of canned sauce to the diced tomatoes to make it stretch a bit further and omitted the red pepper flakes (because I don't use them, but I'm sure it would have still tasted great). I will definitely double the recipe next time for leftovers.

Pizza Dough I

Reviewed: Jul. 18, 2012
This is so fast and easy, I've stopped buying easy dough from the store! I make this all the time, and the different things you can top it with are endless, just like from a pizzaria but much cheaper!
