Pumpkin Butter II

The first time I made this it was way too sweet for my taste. So I made it again today and it turned out great! This time I cut the sugar back. I used 1 cup of splenda and 1 cup of brown suagr and that was plenty. I also left it on the stove for 5 extra minutes based on other reviews because mine also wasn't thick enough for me the first time. I love my "tweaked" pumpkin butter :)

Big Soft Ginger Cookies

I had to redo my review because I made some more changes. When I first made these they tasted great, but when we went to pick them up to eat they fell completely apart. So I read some other reviews and these are my changes: I increased my flour to 2 1/2 cups and I cut the margarine back to 8 tbsp or 1 stick. Increased the ginger to 3 tsp and subbed out OJ for water. I made sure to follow the instructions for creaming the margarine and butter and THEN adding the egg and molasses. I baked for 15 minutes. It didn't fall apart and I still got a slightly softer cookie than I like so next time I'll bake longer.

Pumpkin Dip

Wow!!! I made this dip for the first time and it was soooo easy:) I'm planning on taking it work to share with my co-workers. I made homemade gingersnap cookies and I'll be serving with green apple slices also. The only thing I changed was I used 1 cup of confectioner's sugar and 1 cup of splenda. I also forgot the orange juice but it turned out great anyway. I will definitely be making this again over the holiday season

Pumpkin Puree

I just did this for the first time and I'm so glad it turned out so well! I used a large jack-o-lantern pumpkin. Mine took closer to 2 hours in the oven, but it pureed beautifully in the food processor. I ended up with a gallon container of pumpkin puree!!!
