Chicken Scampi II

Tasty and quick!! I diced up the chicken breasts and it was even faster to make. I think next time I will add a bit of red pepper flakes to give it a little spice. Definitely a staple!

Egg Salad I

This is a good basic Egg Salad recipe. You can do many different things. I used Spicy Brown Mustard, chopped up a dill pickle and omitted the dill herb. It is wonderful! I will be having this for lunch tomorrow and it won't be the last time I make it.

Potato Cheese Soup

Very good potato soup recipe. I omitted the carrots and celery and it still came out wonderful. Nice 'n' thick and creamy! Warms you right up on a cold, chilly night.

Best Marinara Sauce Yet

Yum! Very good marinara sauce recipe. I halved the recipe to make only two cups, and I used one can crushed tomatoes instead of the stewed. I also added fresh basil. It came out great. This is way better than any store bought variety.

Best Breakfast Cookie

These were definitely soft, no doubt. Even my picky boyfriend liked these. I did omit the cinnamon and added chocolate chips instead which made it even better. I think I'll hang on to this recipe.

Peanut Butter Chip Chocolate Cookies

YUM YUM YUM!! These cookies are so good and even simpler to make. I substituted chocolate chips in place of the peanut butter chips (didn't have any on hand) and they were even better. I am notorious for screwing up chocolate cookies but this recipe made me look gourmet. Too easy not to try!

Jay's Signature Pizza Crust

WOW!!!!! The best homemade pizza dough, hands down! I've made many homemade pizzas before, but none of them came out as delicious as this. The dough was so soft and light; I couldn't believe it was homemade; the pizza doughs I've made in the past came out dense and bland. This is the only pizza dough recipe I will use from now on.

Cavatelli and Broccoli

Not only was this delicious, but a very FAST dish as well. It only took me about 35 minutes start to finish. I sauteed the garlic with the red pepper flakes as others suggested to make it more flavorful. What a great way to eat your broccoli. I will definitely be making this quite often.

Mom's Buttermilk Cookies

Yum! These came out really good. Light, fluffy, and soft. I refrigerated the dough for about an hour so that I could roll the dough into balls and then roll into a cinnamon/sugar mixture a la Snickerdoodles. I baked for 10 minutes and that was plenty. Pretty good sugar cookie. I would use again for cutout cookies too.

Buttermilk Coconut Bars

This is more like a cake/cookie crust bar. It definitely has a great flavor though. The crust seems very sweet so next time I think I'll use half Splenda and half sugar. I'll also add some chopped apple to the cake batter for some more texture. Pretty tasty overall.

Chinese Napa Cabbage Salad

I absolutely love this recipe!! It is so easy and so good. Although usually I don't use Napa Valley Cabbage, but rather shred some romaine lettuce and mix in shredded cabbage or coleslaw mix. I also buy a store bought Oriental Sesame dressing (Marzetti brand)-it is the best! I have this pretty often and also add some cubed, cooked chicken. The flavor of the noodle/sesame seed mixture is what really makes this salad taste so good.

Mama Corleone's Sausage and Peppers

Pretty good. I used fettucine in place of spaghetti. I also broke up the sausage in big chunks as I was browning it and cut the bell pepper in very short strips. Added parsley at the end and dusted the whole thing with a generous helping of parmesan/romano cheese. A good change from the standard red sauce.

No-Bake Granola Bars

Very good and very simple to make, not to mention superfast to put together. I used dried cranberries (personal preference)instead of the raisins. The combination of all the ingredients was fantastic. I will definately make this again.

Deep Dark Chocolate Cookies

These are so good!! The cookies came out so soft and full of that dark chocolate flavor. Next time instead of the walnuts I'll add more chocolate chips. I'm definitely hanging on to this recipe for good.
