German Potato Casserole

Warm and quite tasty, this was a big hit at lunch today, not one bite was left in the dish! Try as written or with my 2 modifications 1) boil the potatoes whole, then peel and chunk and 2) used two layers of shredded mixed cheeses instead of Velveeta. :) PS.modified to 8 servings too.

Savory Garlic Marinated Steaks

This came out just OK for me. Balsomic vinegar is a very strong component in this recipe. I think I will try this again, but cut that particular ingredient by half.

Jalapeno Cranberry Sauce

I thought this was outstanding in that it was beautiful in the bowl, tasty and while some were skeptical, those who tried at Thanksgiving were quite pleased they did. I think I will double the pepper next time though :) I'd like more than just a hint of jalapeno.

Balsamic Glazed Carrots

Fixed these to go with TG Dinner. They weren't exactly a crowd pleaser. It may have been they weren't exactly as pleasing to the eye as traditional carrots or it may have been the distinctly different taste. Probably won't serve to family or friends again but I thought these were okay.

Portobello Penne Pasta Casserole

DELICIOUS AS IS!!! You won't be disappointed that's for sure! The portobello mushrooms have a very distinct flavor making it a gormet tasting dish. Try it, you'll love it. I'm going to add some grilled chicken cut into bite size pieces next time for a complete one dish meal. Thanks for a great recipe!

Rich and Creamy Roasted Eggplant Soup

Lovely combination of flavors. To make a lighter version without diverting too much; I omitted chicken broth, cream and goat cheese. I used water, canned stewed tomatoes, a little 2% milk in the end and a sprinkle of mozzarella. This actually tasted a lot like eggplant parmesan.

Roasted Asparagus with Herbes de Provence

I grilled some ribeyes for my daughter and I wanted something speical to go with them. This came out perfect! I added about a pound of halved mushrooms to the asparagus and it was OMG GOOD! Be careful to stay to 12 minutes or under in the oven.

Coconut Poke Cake

Wanting to cut the sweetness some, I made this with coconut milk instead of the coconut cream and it came out wonderful. I used half of the milk combo on one cake and baked a yellow cake with choco chips and topped it with the ramaining milk. FABULOUS! OH YUM! Definately going to make this again and again. Simply wonderful! Enjoy!

Chicken Tortilla Soup V

HOLY COW! THIS IS GOOD!!! People, it doesn't get much easier than this, either. About 45 minutes from start to finish and I didn't change a thing. You can adjust the "heat" by using mild/med/hot salsa. You will enjoy :)

Carrot Cake IV

I rarely cook from a box. This cake came out wonderful! The only change I made was to add 1 grated carrot to the mix :-D as another suggested. I'd put this one up against any totally from scratch recipe, any time! Also, I made creamcheese frosting from scratch, using 2, 8oz pkg cream cheese, 1.5 cups powdered sugar, 6 tbl unsalted butter and a 1/2 tsp vanilla extract. DELICIOUS!
