Baron's Blackberry Cobbler

I splurged on fresh blackberries today at the market.I wanted to make a pie but decided on this recipe. I was so excited, but as soon as I cut into it, I knew the crust wasnt going to be very good. It was very stiff, once I took a bite, I realized it has a under cooked taste, even after I cooked it for an hour and half. I think just the addition of 2 eggs would have made it as fluffy and light as it looks in the photo. I understand this was a more cake like cobbler and thats what I was wanting. But mine was not cake like. More like a dense, vegan type cake. We will still eat it, but next time I will add eggs to get more fluff!

Pumpkin Butter

I used the crock pot, was super easy to assemble. Perfect way to use my last pumpkin from a fall harvest. Maybe next time I will use more pumpkin and less apply juice. I felt the apple may have overpowered the pumpkin by just a bit.

Chef John's Flour Tortillas

OK, so Ive made this a few times, at first they didnt turn out perfect, But I made another of Chef Johns recipes, its the pie pastry and you use a food processor to mix up the dough, so I was lazy and I did it this time for the tortillas. I think that is the magic trick! They came out perfect this time, soft and pliable and very good! Every other time I had mixed it up by hand and they were always a little hard. That is the only thing I did different from times before. I would defiantly recommend using a food processor to mix up the dough, plus its faster. I also have always use oil in place of shortening.

Mexican Pumpkin Empanadas

I used this recipe for just the dough, I didnt have pumpkin but I had alot of extra bananas, I just made up my own banana mixture and used it in the dough. The dough came out quite nice, I did add a little cinnamon to the mix and sprinkled a little sugar on top before baking. I used to make alot of banana bread but I will be making these instead, its the same amount of ingredients, just used differently. I live in Guatemala and shared some with my in-laws, They all loved them, so overall everything came out very nice. I guess you really could put anything in them to suit your taste.

Ramen Noodle Frittata

Surprisingly good! Im moving internationally and on a tight budget with all my pots and pans already packed .. We are living with odds and ends in the pantry .. I decided to give this a try even though it doesnt sound too good .. I was surprised! And the kids liked it too. I added some Hominey for texture .. I will defiantly make this again and use corn with some other veggies too. The Ramen was like a filling and wasnt bad at all.
