Creamy Potato, Carrot, and Leek Soup

This was great! I used vegetable broth, and only used 3 potatoes (that's all I had), but it still came out great! I added a cup of a rice/quinoa mixture at the end and it gave it a nice chewy texture.

Pesto Spaghetti Squash

I used spinach in place of Kale, I wan't really excited about this dish, but someone had given me a spaghetti squash. Wow! It was delicious and my family loved it.

Mashed Cauliflower and Carrots

I used fresh steamed vegetables, and added a little mustard for flavor instead of the vinegar. Not the prettiest thing to serve, but it's fairly healthy and low carb. I enjoyed it, and will make it again.

Pumpkin Dip

I eliminated the frozen OJ, and it was fine. If you don't have time to soften the cream cheese, use your food processor or blender, it comes out perfectly smooth. I made it for the kids at a holiday party, but the adults liked it even better!

Slow Cooker Lentil Rice Soup

Used 12 cups of vegetable broth instead of 8 water/1 broth. I cooked it for 4 hours. Turned out thicker, like a stew, I love the combo of the lentils and the chewy rice. Very easy, and very good!

Downeast Maine Pumpkin Bread

I didn't realize this made 3 loaves until after I started mixing, but I'm SO glad it did, my family devoured this! It was moist and delicious. I followed advice and froze one loaf, and as suggested, it tasted even better after a few days in the freezer. My only tweak was to add a bag of Ghiradelli chocolate chips, and a teaspoon of vanilla.
