Butterscotch Squares

YUM, these were great! I also used 4 cups of Rice Krispies and used snowman marshmallows for the holidays. I melted the chips, butter, and PB in the microwave together as well, this was so easy and they were a big hit! They are really sweet, but that's what makes them wonderful!

Mom's Chocolate Chip Cookies

Chicken Enchilada Casserole II

Yum, this was fantastic. I also used black beans and scaled the recipe down a bit, but it was wonderful. I did use flour tortillas and they seemed to melt into the mixture. I may just skip them next time and serve it wrapped in warmed tortillas.

Spicy Chicken and Sweet Potato Stew

This was really great. I used mixed veggies instead of corn and didn't have any bell pepper so I chopped up a few fresh tomatoes instead. I threw it all in together and let it simmer for about an hour.

Cinnamon Sweet Potato Chips

I thought these were fabulous! I brushed on the butter mixture, but only baked for about 15 minutes. They weren't completely uniform so a few were crunchy while others were chewy, but that wasn't a bad thing for me. I liked the variety. Will definitely make again.

Jumbo Banana Cookies

These are great. I might add a little more banana next time as they're a bit dry, but the taste is fabulous. I also baked at 350 for 12 minutes based on other reviews. YUM!

Blueberry Zucchini Bread

Yum, yum, yum. LOVE this bread. It turned out so moist and wonderful. My 18 month old son can't get enough of it! I did use raspberries instead of blueberries because they were on sale, but otherwise made just as directed. Yum!

BLT Wraps

Sloppy Joe Sandwiches

Not impressed. It turned out too thick and saucy for my taste. Admittedly, I prefer my sloppy joes to have fresh onion and green pepper, so maybe that's my big issue. I made it exactly as listed. This recipe's best attribute were the simple ingredients. I was able to make it without a trip to the store!

Easy Slow Cooker French Dip

This was excellent! I made some of the recommended changes, using less beer, some extra spices and worcestershire and it was very good. We didn't have French rolls, so I made it on Pillsbury French Bread (from a tube), which wasn't the greatest substitution as it got mushy from the juice in the meat. On the right bread, I think it's fantastic!

Beef-Stuffed Squash

This was excellent! Even my husband liked it and he's a little afraid of squash in general. We didn't have Russian dressing, so I made some from a recipe I found on this site. I think it would've been a bit better with "real" Russian dressing, but we'll definitely be making this again!
