Yum!! This soup is delicious, healthy, hearty easy. I changed it by adding potatoes & chickpeas and left out spinach & greenbeans. Used 1 tbsp dried basil and 1 tsp dried oregano as I had no fresh. Used all veggie broth instead of water. Lots more noodles as I like noodles! Added kidney beans at the end so they weren't all mushy. Also added some chipotle poweder, which made all the difference! Blended maybe 1/4-1/3 for great texture! 40 min is perfect or I feel the zucc, potatoes, carrots, etc... would get mushy. Glad I will be eating this for days!
