Lemonade-Mint Iced Tea

Reviewed: Jul. 6, 2008
Fabulous. I used this recipe as a basic idea for what I wanted. I didn't use regular tea. Instead, I used flavored (black cherry or raspberry) caffeine free tea so the kiddos could have some. I boiled 8 bags in 2 quarts of water (approximately). Instead of adding water and juice concentrate I added a bottle of Simply Lemonade. I only added 1/2 cup sugar to mellow the tartness. Adding the fresh mint the night before was the winning touch. EVERYONE loved it. Even the people who don't drink tea.

Carol's Chicken Salad

Reviewed: Jan. 15, 2004
This recipe is good, but I had to change it a little (the second time) to make it great. I didn't use the entire can of water chestnuts...half was definately enough. I also added sliced almonds, shredded carrots and extra celery. A tad bit of chile powder gave it some kick. Very yummy on a croissant.

Baked Dijon Salmon

This was really good. I ate the whole fillet and I don't even like fish. I would have given it 5 stars except that there wasn't enough sauce. Next time I will double it.

Mexican Chicken Kiev

Reviewed: Jan. 15, 2004
Wow, this has some kick to it. I cook chicken often since I do not eat pork or beef, and I rarely find chicken recipes with enough flavor. This is definately the exception. Yum. However, I did make a few modifications to the original recipe...I found that I needed more green chiles than called for and I also used a mix of jalopeno cheese and reduced fat cheddar for the filling. I also added red pepper flakes to the crumb mix as well as additional cumin. Oh, I love it.

Chicken Chimi in the Oven

Reviewed: Jan. 15, 2004
I did not like this at all. I added cheese and cut way down on the chili powder and it still had a spicy-bland flavor. Yuck.

Yum. So simple, so good. I like to eat it with crushed pineapple.
