Peach Coffee Cake II

Reviewed: Aug. 17, 2011
This was truly delicious ! The texture is dense but light and not overly sweet. It would be wonderful with your morning cup of coffee or tea. I did double the topping (left out the pecans) and I am glad I did. This cake rises to the top of the 9 x 13 pan and it needs the additional topping. I also added a 1/4 cup brown sugar to the topping ingredients and think it made a wonderful addition. Will make this again !

Banana Upside-Down Cake

Reviewed: Aug. 7, 2011
Ten stars !!! I changed the recipe just a bit. Here is what I did: Yellow cake with pudding in the mix (it is all I had) 1 stick of butter/margarine; 3/4 cup brown sugar; no pecans. Melted the butter and mixed in the brown sugar. Used a bundt pan and poured the butter/brown sugar mixture in the bottom of the bundt pan after lightly greasing. Sliced four bananas and placed them on top of the butter/brown sugar mixture. Mixed the cake mix according to package directions and poured over bananas. It took 40 minutes at 350 for mine to be done. Let it cool for about 15 minutes in the pan and then inverted onto a cake plate. Very pretty and looks scrumptious.

Brown Sugar Meatloaf

Reviewed: Jun. 5, 2011
This is delicious ! I am a recipe tweaker so with that being said here is what I did. I used tomato sauce instead of milk; added green pepper and some left over rice. I left out the ginger did everything else the same. I spiced it up with garlic powder, onion powder, season salt. The brown sugar/ketchup really does add a wonderful twist. Hubby loved it hot and it will make great sandwiches tomorrow !!

Raspberry Chocolate Supremes

Reviewed: Mar. 13, 2011
These are absolutely delicious ! I let my crust cool for about 10 minutes before spreading on the jam. Having a little warmth helped the jam spread quite easily. I then added the cream cheese/white choc mixture and had no trouble with it spreading evenly. After pouring the chocolate ganache over top, I put them in the refrigerator for a couple of hours. The chocolate crackled in some places when I cut them into bars but that isn't a tragedy for me ! They are so good !!!

BBQ Bacon Ranch Dip

Reviewed: Mar. 3, 2011
Even though I tweaked this recipe I am still giving it five stars !! Here is what I did: Added 32 oz sour cream along with the 2 (8 ounce) cream cheese. Used fiesta ranch dip mix instead of plain ranch. Still put in the bacon, tomato and green/red peppers. Left out the b-b-q sauce and shredded cheese. Spiced it up with some garlic powder, onion powder, black and white pepper and season all salt and whipped it all up in my kitchenaid mixer and it was fabulous! I was looking for a dip consistency and the addition of the sour cream was just the right thing. I had tons of requests at work for the recipe. I served this dip with plain chips and tortilla chips and was a huge hit at work. This will be in my general rotation of dips from now on !!

Brown Sugar Brownies

Reviewed: Feb. 20, 2011
These are delicious ! I wanted to make a 9 x 13 pan so I upped the ingredients as follows: 2 cups sifted flower, 1 1/2 tsp baking powder, 1 cup brown sugar and 1/2 cup white sugar, 1 1/2 cups softened butter, 2 eggs, 1 tsp vanilla and left out the walnuts. I chopped up a white chocolate candy bar and put the pieces on top of the batter. It took about 35 minutes in the 9 x 13 pan. Love this recipe and will use it again !

Stuffed Pepper Soup II

Reviewed: Feb. 17, 2011
I used this a base recipe because I did not have green pepper or ground beef. I used fresh bulk sausage and red/orange/yellow peppers and brown rice. But I still give 5 stars because I don't think I altered it to the point of it not even being similar to the original. I will try it with ground beef next time but it was absolutely delicious with fresh ground pork in place of the ground beef.

Sweet and Tangy Slow Cooker Bar-B-Q Pork

Reviewed: Jan. 30, 2011
This is a wonderful, flavorful recipe ! I made it first with the country style ribs and it was so good I decided to try chicken. WOW ! It was awesome with boneless, skinless chicken breasts. I left out the water and was glad I did. The pork had just enough fat that if I would have added the water the sauce would been too thin. I made up the sauce the night before added my meat, sliced a vidalia onion and red pepper into rings and put on top. Marinated it over night in a sealed tupperware bowl. In the morning put it in the crock pot so the peppers and onions were on the bottom and put it on low. When we got home from work 10 hours later the house smelled so good ! You can adjust the seasonings to make it more or less spicy which is great because we love spice so I upped the tabasco and garlic powder. This would also be great for grilled chicken on the grill. I am going to try beef roast next for bar b que beef sandwiches !! Thanks so much for this recipe !!
