yesterday I blogged because I could not find a salad recipe.  Thanks to you that tried to help me.  One of you suggested I may have seen it on another site, which I knew could not be the case since I don't very often log on to other sites.  Low and behold, I looked in my documents on my computer and there it was saved in Word.  It popped up on my home page along with other pop ups and the top news stories and I captured it and saved it.  Plan to serve it tonight with short ribs, thought the citrus would be a nice play off the richness of the ribs.  Here's the recipe if you would like to make it too. 

Cheddar and Apple Salad with Citrus Dressing   Serves 8
1 bag mixed lettuces with shredded carrots
1/2 apple chopped
1/2 cup shredded sharp cheddar cheese
1/4 cup sliced blanched almonds

1/2 c EVOO
3Tbsps orange marmalade
2 Tbsps balsamic vinegar
1/4 tsp. sugar

 I am fooling with the idea of adding some mandarin orange sections.  Hope it is good after all this hooplah!

Nope, info. gone forever. But I just made it and it is good. I adjusted a little bit here and there, more vinegar and more marmalade and a squeeze of lime, but it is good. Serving tonight on the salad. I should have noted the source when I saved it, but just the mechanics of saving from my email to word consumed all my brain cells, but I did it. Thanks for your research. No wonder you could not find it!!

About Me
I am a retired registered nurse. I have two fabulous grandchildren ages 10 and 7, they live only 1 mile from me so we cook together often.

I like one pot meals, slow cooker, rustic fare. Lately, I am cultivating recipes for soup and have turned out some really good results, especially using curry seasoning. I am not a baker.

My Italian spaghetti sauce. My famous pot roast made in an oven bag. Appetizers.
My cooking tragedies
My latest debacle is making Pho, Vietnamese beef soup. Very labor intensive, many exotic ingredients, cook all day. I went to strain it through a cheesecloth lined colander and forgot to put anything under the colander. Down the drain it went; 7 hours worth of broth. Oh Well!
