Sausage Mushroom Quiche

so happy to have this recipe! Used what I had in house...italian sausage, mexican blend and cheddar cheeses...but it was the texture that sent me over the moon. It was "sturdy" yet light and filling. Spouse raved. I believe the mayo turned this trick. I will make again with the pepper jack which will probably make this my favorite quiche ever.

Stuffed Peppers with Turkey and Vegetables

attracted to this recipe because it's chock full of veggies and sounded so healthy. enjoyed it but it needed more flavor. Will experiment with additional and other spices. it was filling while being perfect for a warm summer evening.

with thin sliced liver you must subtract on cooking time (1/2 of stated time). otherwise, the dish was okay, but i've done better and will go back to my regular recipe.

Indian Style Sheekh Kabab

This was wonderful! The flavors were fantastic! I have an international supermarket nearby with all I needed for this. I changed nothing at all. Didn't need to mess with the food processor, just ran the onion through the coarse side of the box grater. Everything else tasted the edge of my chef's knife! ;) I served this with frozen nann (cheated, sorry.. ) and the AWESOME cucumber raita by BeneloventEmpress elsewhere here. Had to roll me to bed... ;)

Cucumber Raita

I prepared this as more of a condiment than a salad, because that's what I was after for my purpose. It's also awesome as a salad! I used 1 regular, peeled cuke and shredded it with the corse side of a box grater. I put it in a fine sieve and sprinkled it with some kosher salt, stirred it well and sprinkled another pinch of salt on it. I let this drain @ 15-20 minutes while I assembled the other ingredients. This draws out much of the moisture and keeps the cuke from watering down the raita. Otherwise, I followed the recipie as printed, cutting all in half since I only used one cuke. This was a FANTASTIC topping for Yakuta's Indian Style Sheekh Kabab elsewhere on this site. In fact, the two go together so well, I'll not make the kababs without this raita!

Slow Cooker Guisado Verde

we loved this!! served with rice and pinto beans and encouraged a "have it your way" style of eating. tortillas, cheese, sour cream, tomato, lettuce and avocado were offered. I ate mine as a soup/stew. the BH made little tacos with his. It was delicious and great fun. something to be filed under "PARTY FOOD" future reference.

Turkey Wild Rice Soup II

soup turned out tasty. enjoyed the texture and how much more like a meal it was than turkey soups past. Does need more broth than called for in recipe if you want it more soup-like and not stew-like. definite keeper for next post-thanksgiving leftover parade!

Baked Ziti

This was truly epic! I went "whole hog", using nothing low-fat. We rarely eat like this, so it was OK. Whole-milk riccota and mozzerella! YUM! Used penne pasta. Cut down on the meat a bit, used 1# GB and @ 1/2# Ital. Saus. Sauteed some onions, baby bella mushrooms and maybe 3 crushed cloves of garlic with meat. To use no garlic in this dish would have been a sin . Like someone else said, used Newman's Sockerooni, too, but it's only 24 oz, so I added a can of Ro-Tel 'maters with chilis (with the juice), like another someone said. Also put under the broiler for a minute to give it a touch of color, and served with garlic bread. Worked to perfection. This was almost like lasagna. You could add a green salad, if you feel the need for it. This has earned "keeper status" in our kitchen, will be passed on to the twins so they can entertain a crowd on Superbowl Sunday! ;)

this rating is due to the fact that i screwed up and used too much sugar in one step. my mate said it was good but i think he was being kind. it made my teeth hurt. must try again to be fair.maybe in the winter.

Pork Green Chile

wicked good! added fresh garlic and used adobo seasoning instead of the salts. reduced liquid to 2-1/2 cups (1 cup chicken broth and 1-1/2 cups water), the first bite was fiery but after that it was a spicy delight with an underllying depth of flavor. oh yes, i also used roasted jalapenos not canned so its probably why it was such a barn burner. will do again--although i will have to tone it down for mere mortals.

Delicious Ham and Potato Soup

this is a fabulous recipe. followed the basics but used chicken broth instead of water and bouillon then added 1 tsp. garlic salt. and, okay, i was trying to clean out the fridge--so i added fresh corn (2 cobs worth),carrots & 1lb. fresh bratwurst instead of the ham. my mate was very pleased. so i will definitely use this recipe again. maybe next time i'll actually use ham!
