Black Bean Stuffed Peppers

This was very good and easy to put together. I added some frozen corn for more color and 1 tsp garlic powder. For stuffed peppers I prep the pepper then quick boil to ensure pepper is soft - then stuff and bake. So I skipped the water in the pan and just baked. I used Trader Joes Brown Rice Medley - this is a kitchen staple! I prepared rice in chicken broth but you could use vegetable broth just as well.

Strawberry and Rhubarb Crisp

Just prepared this recipe and very good starter. I doubled the strawberries and rhubarb. Added 1 1/2 tsp of cinnamon, dash of salt, 2 T lemon juice and few grates of nutmeg. Also added a 1/2 tsp of cinnamon to topping.

Man Dip

I just make 1/2 of this recipe (of course depends on how many you are serving)...1 package of cream cheese and 1 can of chili - with or without beans (I like Armour brand). I add a can of diced chili's too and sprinkle across the chili and then add Mexcian cheese. Yep heavy appetizer and men love it!

Picante Chicken Rice Burritos

Very good - I added fresh cilantro, crushed red peppers and used mexican rice instead of long grain rice because that is what I had on hand. I did put a little salsa on the bottom of the baking dish before adding the burritos so they wouldn't stick. Will make again.

Southwestern Chicken and White Bean Soup

Very good! I used chicken tenders - cut to bite size chunks. A couple of dashes of hot sauce during cooking - like others I just prepared on stove top. Served with dollop of sour cream and cilantro - preparing this for Super Bowl!

Caprese Appetizer

I have not made this recipe but have one fairly close. I use marinated boconccini balls and halve them as well as the Santa Sweet tomatoes. Santa Sweet (maybe cherub tomotoes too) are the best tomatoes for this type of appetizer or just palin snacking! I use the whole basil leave between the cheese and tomato. I like to use the "fancy" toothpicks with the frill on the end and customize to event - red/green for holidays, team colors for game day. Just before serving I will drizzle the marinade from boconccini balls over the tomatoes/cheese to "freshen up". Also sprinkle with chopped basil.

Banana Crumb Muffins

These are really very good, moist muffins. I rated 4 stars for the reason I took suggestions from other reviewers. Adding 3/4 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp vanilla, mixing white (1/2 cup) and brown sugars (1/4 cup), substituting canola oil for butter. I also added topping halfway through baking. Thanks for sharing!

Hanky Pankies

Like most reviewers I have been making these for years. I like having these on hand too, I usually roll in either wax paper or parchment paper and store in freezer and slice as needed. I like to kick it up sometimes with the Mexican Velveeta. I also like to serve on the cocktail sourdough bread.

These Baby Back Ribs ROCK! I did not have molasses and used real maple syrup. Luckily I had sauce leftover for some center cut pork chops later in week! Thanks for sharing this fantastic recipe! You made my husband a very happy man!
