Turkey and Quinoa Meatloaf

I never liked meatloaf growing up and I loved this. I didn't have tomato paste but I had 1/2 a can of tomatoes with green chilis so I blended it and used it instead. I also used the tomatoes in lieu of water for the topping. I baked it on a cookie sheet and the texture was perfect.

Beef and Rice Medley

This was really good. I followed JLLEBOW's modifications as I had brown rice too. I used roasted tomatoes with green chili but no green pepper. Still turned out great.

Black-Eyed Pea Gumbo

this was so good with the modifications suggested by previous reviewers. I added chicken andouile sausage, chili powder and herbs from Provence (it has thyme and rosemary along with other spices). I was worried because I'd never had black eyed peas before, but after doing an ingredient search this was my best option. I did have to go to the store and get some ingredients, and it wasn't ready 'til 8:45, but definately worth the wait.

Fruity Curry Chicken Salad

Banana Plum Bread

Needs SALT! I used 1/2 tsp, also, as suggested by others, substituted brown sugar for white sugar and added nutmeg, cinnamon, and vanilla. I also included the juice from the fresh plums. Bread is not overly sweet, and turned out moist (in a good way). thumbs up from co-workers.
