Oven Kalua Pork

Reviewed: Sep. 18, 2013
This was excellent. Never ate or cooked this before. Followed the advice of others and shoved minced garlic and ginger in poked holes; doubled the smoke and wrapped in banana leaves then foil.Even cut back a smidge on salt and used soy sauce to rub all over. I cooked a 7.5 pound shoulder for 8.5 hours at about 310F in a water bath. Once done, I drained the fat and poured the juices onto the shredded pork. Enjoyed with Hawaiian bread, pineapple and coleslaw. OhMyGosh!!! Cannot wait for leftovers tonight! Thanks for the recipe. A keeper.

Salmon with Brown Sugar and Bourbon Glaze

Reviewed: Aug. 13, 2013
A little too sweet. Would have liked the sweetness combined with some savory flavors. If I try it again, I will try some of the other reviewers advice re: adding garlic and soy.

Simple Whole Roasted Chicken

Reviewed: Aug. 8, 2013
Since it's summer, I cooked this on the grill with a can of ginger ale inserted in the cavity (standing up) and it was great!!!! The flavors are amazing. We had half for dinner and with the left-overs I made a small chicken salad and a pot pie. All so full of flavor! Great job and thanks for the recipe!

Minty Orzo Lentil and Feta Salad

Reviewed: Aug. 1, 2013
This was good. Like everybody else I made adjustments for what I had on hand and personal taste. I cooked the lentils with half the garlic and some of the red onion and a bay leaf. I have to complain about the directions regarding the lentils. It just says to cover with water, well how much is that? I never cooked lentils before so I found that I had to keep adding water, so that was annoying. Made with couscous instead of orzo to be healthier. Added a little of celery, and used half white balsamic and half red wine vinegar. Used dry dill. When I served it, I added fresh tomatoes on top; will add cukes as well tonight. This recipe makes a lot.

Beer Can Chicken

Reviewed: Jul. 17, 2013
this is my first bad rating of a recipe. The rub was just so terrible that I had to remove all the skin and any trace of it before eating it. Sorry but this was not for us.

Couscous and Cucumber Salad

Reviewed: Jul. 17, 2013
I tried it the way the recipe read first and it was very bland. So the next time I tried it by combining another recipe here for couscous salad plus my own ideas. I added juice of half a lime and only juiced one lemon. I then whisked in olive oil (more than stated here) and white balsamic vinegar. Then I added just a tiny bit of fine chopped red onion, a bit of fresh cilantro and a bit of fresh mint. Sliced some cherry tomatoes with 3 english cukes and it was pretty darn good! Oh, and I toasted the couscous with olive oil and chopped fresh garlic first before cooking in chicken broth! Topped it with Feta.

Hot Artichoke and Spinach Dip II

Reviewed: Jan. 10, 2013
good flavor but a little dry and hard. On second try, I didn't drain the veggies completely dry and added more garlic for more umph. Also tried sour cream plus the mayo, which helped a lot.

Apple Crisp II

Reviewed: Jan. 10, 2013
This is by far the worst apple anything I have ever made. Under the 'OKAY' tasting topper, the apples were just sitting there with no flavor, plainly and oh so boring. Made it for guests and I was so embarrassed once I cut it open to serve. Terrible.

Classic Peanut Butter Cookies

Reviewed: Dec. 20, 2012
Really good. I doubled the recipe and it came out great. They bake better when the dough is really cold. If the dough was not cold, the cookie tended to flatten out more and burn a little. But the flavor was great! House smells so wonderful.

The Best Rolled Sugar Cookies

Reviewed: Dec. 20, 2012
They were good. I am thinking that any error in making these cookies were solely mine. This was my first time making any Christmas cookies and I was unsure how thick to make them so they would turn out just right. Finally got there!! Yum.
