Baked Tilapia in Garlic and Olive Oil

This is my new favorite recipe for Tilapia. I did modify the recipe to suit my taste buds. I didn't marinade this at all. I used my roasted garlic and spread two cloves on each piece of fish, added black pepper and salt. Drizzled olive oil and chili oil (Chinese grocer carry this) on fish. The last thing I added was Pappy's Rub on top of the onions (like a canjun spice mix). I used my mandolin slicer to thinly slice the onions. Baked for 30 minutes and broiled another 10 minutes. The onions taste more like onions rings when they are broiled and get crunchy. We ate 6 pieces between the two of us. DEEEEVine.

Antipasto Salad

I altered the recipe slightly. I added 3 cans of sliced black olives, salami,cucumbers, and lots of garlic. I made this for a picnic, but we ate most of it before we got to the picnic.

Basic Crepes

I stuffed my crepes with smoked shaved ham,provolone cheese and parmesan cheese. I top the crepes with cheese sauce made of butter and provolone cheese, baked until the cheese bubbled (12 minutes).I baked them at 300 degrees. My husband said they were a little bland. So, next time I will add basil,garlic,ground pepper hot peppers and scallions to the batter. The crepe recipes was a good base recipe. I bought the pancake pan that was seen on TV. I bought mine at Wal-Mart for $3.00 on the clearance rack. The pan works really well. Every crepe was the same size and cooked to perfection.

Hungarian Mushroom Soup

This is the best mushroom soup recipe I have ever found. I was going to make Chicken soup for my husband who has a bad cold. I didn't want to make plain old chicken soup.I found this recipes and decided to give it a try. I cooked the shredded chicken with portabella mushroom, onions and added garlic. I didn't have chicken stock. I had to use beef instead. I also didn't have sour cream on hand. It is the best chicken and mushroom soup I have ever tasted. Thank you for sharing your recipe. My sister-in-law is Hungarian. I am forwarding the recipe to her. Excellent!

The dressing is refreshingly good. I grow my own mint. It grows like a weed and is a perennial. What I like about mint, is that it gives food a fresh wholesome summery flavor. Thank you for the recipes.

Asian Chicken Salad

OMG! This recipe is devine. I didn't have rice noodles on hand, so I had to use round rice wraps instead. I tried to break them up by hand. I had flakes all over my counter. I decided to use my food process to crush them up. They came out super minced. I fried them in my wok and left them in the skillet a little longer than recipe required. I was concerned that my family would bite into one and cut their mouth. I didn't have rice vinegar, so I used red wine vinegar. I also grilled my chicken and basted with sesame seed oil. I don't use worthless iceburg lettuce. I used romaine. Thank you for a wonderful recipe.

Florentine Artichoke Dip

My in-laws' love this dip, even my sweet little picky niece loved it. I did modify the recipes a little. I added real bacon bits, shrimp,chopped onions,and only 1 carton of low fat cream cheese.

Prosciutto and Parmesan Pinwheels

I omitted the mustard from the recipe. My husband's family doesn't like mustard. So, I used a little olive oil, garlic powder, black olives and basil instead. I can't eat just one, I have to eat the whole batch.

Awesome Slow Cooker Pot Roast

The gravy is excellent!!!!! I cooked a roast in the oven using this recipe as well. Turned out great. This is the only roast recipe I will ever use again.

Cheesy Chicken Pot Pie

I used frozen tart shells for this recipe. My husband and I think that this is the best pot pie we have ever had. I had never heard of using cheese in a pot pie before. OMG, it made it taste even better. Thanks for sharing.

Adobo Sirloin

My husband went wild when he tasted this. This recipe is a keeper. I marinated a small roast in the adobe sauce (I used the whole can of Chipotle/Adobe sauce)for 24 hours. Then grilled it on the barbie with onions, and later the green peppers and mushrooms. It was fantastic. I had never used Chipotle peppers before and was a little leery. It reminded us of the food we had when we vacationed in Mexico. We loved it.
