Super-Delicious Zuppa Toscana

This was extremely delicious. It's been 3 weeks since I last made it and I'm planning to make it again this weekend. I only made mild tweaks to the recipes when I made it. I don't like cooked spinach, so I swapped it for kale; my husband doesn't like cream, so I left that out.

Paleo Friendly Applesauce Cookie

Really delicious! They're a bit fluffier than a typical cookie, but still tasty. I actually doubled the spices and used my own blend of ginger, cloves, and allspice. On some of them, I drizzled chocolate over the top which was a nice touch but not necessary because they were already really good. Everyone at my coffee and treats get together loved them! I do think that 400 was a bit high for my oven and on my second round I cooked them at 350 for 5 minutes longer. My final comment is that they don't spread or change very much while baking, so if you want flatter cookie-looking ones, you should shape them yourselves when you put them on the pan.

Grilled Garlic Artichokes

I am not a fan. It's possible that I simply do not like artichokes all that much, but I did not enjoy this dish as much as I'd hoped.

Seared Ahi Tuna Steaks

I looooooved this recipe. I have never eaten a tuna steak before and now I think I am in love. I don't know if it was the tuna from Trader Joe's or the recipe itself, but this was fantastically delicious. I made it almost exactly as instructed except I didn't have peppercorns or butter, so I swapped them for ground pepper and coconut oil, respectively. I also think I would have liked my steaks slightly more rare, so I will be searing for 1 min on each side next time.

Easy Mint Chocolate Chip Ice Cream

Penne with Spicy Chicken Sausage, Beans, and Greens

This is great! In the past, I've made it without the arugula because I don't like cooked spinach and I was afraid this would taste similar. Recently I made exactly as the directions said and it was fantastic! Cooked arugula tastes nothing like cooked spinach. I think the only change I'll be making in the future is a little more pesto and a bit more salt.

Boilermaker Tailgate Chili

This is the chili recipe I always use. I've only ever made it with just beef, no other meats, but it's still always delicious. It comes out a bit watery though, so plan to let it simmer for extra time or reduce the number of bell peppers to help out with this problem.

Modenese Pork Chops

This is truly delicious. I make this with Trader Joe's French Cut pork chops and it is to die for. Wine and garlic are the strongest flavors and I love it.

Vegetarian Lime Orzo

This was truly delicious. It travel well with no reheating necessary. I used it as my lunch throughout a week. Everyday I did something a little different to jazz it up. One day I used parmesan to add flavor, another I used feta, another I used kalamata olives, and another I used chopped up roast chicken. Every way I tried it was delicious. I highly recommend this dish.

Spinach Salad with Pistachio Chicken

Chef John's Cauliflower Pizza Crust

I'm not impressed. The cauliflower flavor was very strong which could be fixed with more cheese. But the texture after cooking was moist. The outer layer dried and browned, but deep inside was wet. I've made better cauliflower crusts.

This is crazy delicious! I did not add the anchovies and I think it was a bit too sweet. I will decrease the honey next time. Still wonderfully delicious and not at all difficult to make.

Denise's Peanut Chicken

I wish I could give this a 4.5 because I would say it's a 4 but my fiancee adored it. I think it could use a bit less cilantro and a bit more soy sauce. The strongest flavor in this dish was probably the ginger. If you don't like ginger as much, I would recommend either grating it instead of chopping or reducing the amount.

Triple Dipped Fried Chicken

Phenomenal recipe! I made this using my own gluten-free flour blend and a sorghum beer and it came out wonderfully! My only comment is to not be stingy with the salt. Also, frying the extra batter in the remaining oil makes insanely delicious (although ridiculously unhealthy) treats.

Garlic Chicken

This was pretty good. It didn't blow my mind away but I don't really have any solid complaints either. I didn't have to cook it as long as the instructions said to do and the breading quantities were perfect. I will be making it again, mostly because it was so easy and it does taste good, just not phenomenal enough to get a five.

Grandmother's Buttermilk Cornbread

Fantastic recipe! I've adapted it into a gluten free version and everyone who ever tries it absolutely loves it. I've also made the recipe exactly as is and it is wonderful. The only thing that really needs to be changed is to add eggs slowly while whisking very quickly. If you add the eggs quickly, you'll get solid bits of egg in your cornbread. To make gluten free: swap out all purpose flour for a gluten free flour blend (I make my own) Add 1tsp xanthan gum. Whisk this into the flour blend before adding. My own special twist: Swap out half of the butter for coconut oil. Absolutely delicious!
