Easy Chicken Enchiladas

This was such an easy dinner - which I can really appreciate as a busy mom! I didn't read the reviews first, as I normally do since I pulled this up on my phone while on the go. I didn't add much sour cream and only half a can of the cream of chicken soup and after reading the reviews, I'm glad! I made this meal for me and my husband only so I definitely didn't want to end up with 10 tortillas (it made 5). I personally find 5 cups of cheese WAY too much, and I'm a cheese lover. I used about 2 cups total including what I sprinkled on top. I also used half a cup of enchilada sauce in the filling and poured the rest on top. These need longer than 25 min to starting browning - mine took around 35. I personally like the crisping you get around the edges :) These were a little on the soggy side, but not so much so. I thought there was no way we'd be able to finish the 5 but my husband surprised me and ate 4 :O A tip: I nearly always sautee onions but didn't with this recipe - I would recommend it, the onions are a bit overpowering as is.

Eggnog Quick Bread

This bread is fantastic! I always, always read reviews for any recipe I find online and I followed everyone's suggestions for keeping this a moist bread. I used 2 cup of flour, a packet of vanilla instant pudding, 1 1/4 cup eggnog, and I added a tablespoon of vegetable oil for good measure. In addition to a loaf, this recipe made 4 "cupcakes" for me, my husband, my son, and my daughter and I coated those with an eggnog glaze that a previous reviewer suggested. I used a little bit of cream cheese in the glaze as well and the consistency was more of an icing that glaze, which I prefer. I needed to cook this for 55 min for the middle to set fully and at that point the sides and top were starting to burn. May try the "tenting" method next time. Tasted delicious nonetheless, this one is a keeper! Now that it passed the "family test", it's on to making this for friends and coworkers!

Downeast Maine Pumpkin Bread

So I'll admit, I am my own worst critic when it comes to my baking and I had high expectations with this recipe. About an hour out of the oven I wasn't impressed; it was dry and I was really hoping for a nice moist bread. The next morning my husband absolutely loved it and I was suprised at how much the taste had improved. I don't think this recipe quite makes a full 3 loaves. I was able to make one larger loaf, one small loaf, and about 4 muffins with the small amount I had left over. I also made a small bowl of cream cheese frosting - the usual cream cheese, confectioner sugar, vanilla, and butter combo. I frosted the muffins and drizzled over the loaves, yum! I brought a loaf and the muffins to work and they were gone by the afternoon. Everyone is begging me to make me again - so I'd say this is a hit! If anything I'd add a little bit more of each spice, I really love my flavor. I also used applesauce in place of the vegetable oil which is how I've always made my carrot cakes, etc. I wouldn't even try to eat this bread until the next day though, the taste is sooo much better. Enjoy! This is a keeper!!

Peach Kuchen

Kuchen has been a treat in my family for years and this is the first I've tried my hand at making it. I'm a somewhat beginning baker at 22 but I really enjoy it. My aunt gave me her recipe but because I didn't have shortening or cream on hand I went with this one. The final product was very dry and really lacked flavor. My husband who loves the family kuchen didn't even finish his slice. The taste improves as you get to the crust but I was surprised at the blandness. The only change I made was adding 1/4 tsp of rum extract after the vanilla. Seems to me there should have been more flavor. Our family recipe is a little different, adding in a filling with the peaches comprised largely of eggs, cream, and sugar. I would suggest adding a little more sugar to this recipe!
