These are awesome, they were a hit. I don't think I creamed the butter and sugar enough, so they were a little muffin-like. That seems to be an important step for cupcake consistancy. They were a little more dense and not so fluffy- my fault, but they were still sooo good! Other than that I followed the recipe exactly, including the crystallized ginger- which I was able to find at Wal-Mart in the spice section. I used a recipe for Red Velvet frosting from a different site (my go to frosting), and added just a tiny bit of cinnamon extract. I also used another reviewers idea to use glazed walnuts as a garnish (I just melted butter and brown sugar and stirred in walnut halves then cooled on wax paper). I will be making these again I'm sure.
