I am trying to go "waste free" at our house, which means saying no to packaged bread and the wasteful plastic wrapper. This is the best recipe I have tried for bread, so far. It makes terrific sandwich bread for my kids' lunches. To make it close to true whole wheat, I use only 1/2-1C of white flour. Then, I use equal parts whole wheat and "white whole wheat" for the remaining flour. Also, a bit less salt, only 2.5 teaspoons. Also, if you don't want to use butter, vegetable oil works just as well. My bread pans are big, so I only get 2 loaves, but they are perfect! This recipe is terrific!
