Baked Ziti with Sausage

This was delicious. The whole family loved it and couldn't get enough. It also made great leftovers for lunches. I have made this twice now. The first time, I didn't make any changes to the recipe - other than using fat free ricotta. The second time, I sauteed some mushrooms and threw those in. It was excellent either way. We'll make it again often!

Mini Chicken Pot Pies

First, there isn't anything in the filling to add flavor so I added rosemary and thyme as well as salt and pepper. You can add any herbs -these just happen to be our favorite. The first time I tried this, I used refrigerator biscuits and was disappointed because the biscuits were still doughy and partly uncooked after 25 minutes in the oven. The second time, I made the biscuits myself (Cheddar Biscuits from this website)and used less dough per pie than the refrigerator biscuits were. That turned out much, much better. With these changes, the family thought these were delicious!

Chicken Wild Rice Soup I

I love chicken wild rice soup and have been trying to find the perfect recipe. Unfortunately, this wasn't it...BUT it was still pretty good. The slivered almonds were genius and the whole family loved that. Overall though, I felt it was bland. The curry didn't do as much for it as I hoped it would and other than that, there isn't much in the recipe to really flavor it. I made the recipe as written up to adding the chicken broth, then I put everything but the half & half into the crockpot. I did cut the butter in half. I also doubled the carrots because we like more veggies in our soup. When I went to add the half & half at the end, the soup already seemed really thick so I just added a cup of skim milk instead. I was glad I did. It would have been WAY too thick otherwise.

Double Quick Dinner Rolls

I used this recipe as the dough to make runzas (bierocks) and it worked perfectly. It is tastier and much less time consuming than the runza dough recipe I had been using. I did the second rise in the bowl (since I wasn't putting it into muffin cups) and added some extra flour as I rolled it out. Since some reviewers said the onion powder was overpowering, I doubled the recipe and used 1/2 tsp onion powder and 1/2 tsp garlic powder. Other than that, I followed the recipe. Excellent!

Incredible Potato Casserole

Great recipe! I wanted it less creamy and more chunky so I cubed the potatoes instead of grating. I also minced some red onion and sauteed it in the butter before adding the cream soup. Other than that, I followed the recipe and it was perfect with our Christmas ham. Everyone loved it!

Asian Style Country Ribs

First off, the sauce is amazing. (We kept the sauce and served the ribs with wild rice. The kids loved the sauce mixed into the rice.) However, I took the suggestion from some of the reviews to cook these in the oven and that was a HUGE mistake. The ribs were very tough and kind of tasteless even though I had marinated them overnight. I think if I had done them in the crockpot, they would have been tender and I would have given the recipe 5 stars...so probably not the recipe's fault. I'll try them again in a slow cooker. Personally, I would NOT recommend baking them in the oven.

Ground Beef Stroganoff

This is a good recipe, definitely comfort food, but I very highly recommend using fresh mushrooms! They make it SO much more flavorful than canned. I also used fresh garlic instead of garlic powder. I did add some cornstarch and water at the end because I wanted it a little thicker. I don't understand the reviewers who substituted condensed cream of mushroom soup. I wouldn't recommend it. Part of my whole reason for trying this was to get a little further away from pre-processed foods and find something closer to making it from scratch. The thing about using condensed soups is that every sauce ends up tasting kind of the same. I like that this has a different flavor.

Homemade Sloppy Joes

A recipe to please the whole family! The kids have requested this over and over. The first time I made it, I didn't change a thing and it was delicious but just a little too sweet for me. The second time, I added a little more Worcestershire and dijon. Now I always make it that way, but that's really just a matter of personal preference.

Yummy Honey Chicken Kabobs

Perfect! We served these for a backyard party and no one could get enough of them. We made three different marinades that night and this was everyone's favorite BY FAR. We did marinate the meat and veggies for 8+ hours. The meat was tender and full of flavor.

Vegetarian Sweet and Sour Meatballs

This is a fantastic recipe! I'm not a vegetarian, but I'm always looking for options to serve to my friends who are. Everybody loved these, meat eaters and vegetarians alike! They were even better the next day so if you're serving them for a party, I would recommend making them the day before and reheating them in the crockpot. The second time I made them, I used low/no fat or low sugar/calorie versions of everything I could and personally didn't notice any significant difference in consistency or taste. Wonderful!

One-Dish Chicken, Vegetable and Rice Bake

The idea was great but the chicken took about 30 minutes longer to get fully cooked. If I make this again, I will at least partially cook the chicken before putting it in the casserole. I sautéed some onion and celery to put in and used chicken broth instead of water. My kids aren't big fans of cheesy dishes so I skipped the cheese and put in a little sour cream instead. That worked out just fine.

Pumpkin Squares

These pumpkin squares are fabulous. I have a similar pumpkin bread recipe that takes over an hour to bake, but I needed something quicker to take to a last-minute party so tried this recipe. These were definitely quick, moist and delicious. I didn't change a thing (other than sifting powdered sugar over them when they came out of the oven) and I was so pleased with the results...as was everyone at the party!

Ham and Potato Casserole

This recipe was tasty but took much longer to cook than the 40 minutes called for. I don't know what might be different about my oven, but it took over an hour to get the potatoes soft enough. Next time I would definitely pre-boil the potatoes so they are already just about cooked. Everything else was done but the potatoes were still crunchy. For our family's taste, the lack of herbs did leave it a little bland. I ended up adding fresh thyme.

Banana Banana Bread

This is easily some of the best banana bread I've ever had...and much easier than most of the recipes I've tried. My grandma's recipe has a little orange juice in it so I did add a splash. Otherwise I just followed the recipe.

Kabob Marinade

This was pretty good but I wasn't "wowed" by it. With all the ingredients, I thought it would have more flavor. Maybe it would be better if it marinated longer. We marinated for about 8 hours. If I made it again, I would marinate overnight.

Shrimp Stir-Fry

We loved this!!! To those who found it bland...I did add 2 extra tablespoons of soy sauce, another half teaspoon of sesame oil, a full teaspoon of ginger and several cloves of fresh garlic rather than the garlic powder. Other than that, I followed the recipe and it was delicious. We served this over a "multigrain medley" we found that had brown rice, red rice, wild rice and quinoa so I'm sure that helped make it more flavorful too. Such a nice healthy recipe!

Delicious! I made this recipe just as written other than adding 1 teaspoon of thyme and thickening the sauce a little with a teaspoon of cornstarch mixed with water. The whole family loved it!

Frozen Cranberry Salad
