Italian Zucchini Casserole

Very good... I would even enjoy the vegetable portion (excluding the stuffing mix and cheeses) over hot pasta! Only thing I changed was to substitue dried herbs for the fresh because I didn't have them... 1 tsp dried basil and 1/2 tsp. dried oregano.

Stephanie's Freezer Spaghetti Sauce

I made minimal changes to this recipe when trying it for the first time - I peeled the tomatoes first (personal preference), reduced the sugar to only 1/8 cup, and reduced the salt to 1-1/2 tbls - I did make this on the stove, simmered it for three hours. Served it to my ITALIAN father-in-law and he declared it "Great" - he said his mother used to make a sauce like it many years ago. Some of us topped it with feta cheese, and some of us topped it with shredded parmesean (instead of grated). Thanks very much for the recipe Stephanie- it's a keeper!

Corn Chip Salad

The entire family liked this recipe, including grandma and our three-year-old. The only suggestions I would have are: 1) Plan to feed a large group, because the salad just isn't the same the next day, and 2) I would reduce the amount of salad dressing and the amount of corn chips, because it was a little too "wet" and slightly salty for our tastes... But definitely one that we will make again - great idea!

Herb Roasted Pork Loin and Potatoes

The only changes I made were to reduce the amount of garlic powder on the roast to a little over 1/2 a teaspoon - and I accidently forgot to put the fresh chives in with the potatoes when I tossed them with the rest of the items, so I sprinkled them on top of the roast and potatoes immediately before serving! Served it with squash and a salad and it received excellent reviews from our guests! Thanks much "Mom2wildchild".

Zucchini Galore

My family really enjoyed this recipe. It is very simple to prepare and delicious! The only changes I would make when I make it again is to saute a little garlic in the pan first and then add some black pepper along with the salt at the end! Thanks for the recipe Flora!

The Best Garlic Bread

This was decent, but not the "best" I've ever had. I'm used to making garlic bread with fresh garlic instead of powder, so maybe I'll try this next time with one clove of minced garlic instead of the powder. Thanks though Kendra!

English Baked Potatoes

I too used only 1/4 cup oil. They were very easy to make, and had a nice texture when cooked but were too plain for me. I will doctor them up next time with minced garlic, diced parsley, and a sprinkle of Parmesean cheese.

Golden Sweet Cornbread

Very good - great texture! Tastes very similar to the "Marie Callendars" brand mix if you are familiar with that. When I make this again I will add a slight bit more salt - that's the only change I would suggest...
