I am not very good at talking about myself. :) I recently remarried and have never been happier. I have two awesome kidos. My son is 18 and in his first semester of college and my daughter is just about to be 16 and so busy I can barely keep up with her. I Love my husband and so far all he gripes at me about is weight gain from my cooking. LOL
My favorite things to cook
I like to try all kinds of things. Most of the time I use recipes for a basis then change it up some to suit my taste. Love everything from soups and salads to mexican to good ole home cooking. I love to bake cookies and cakes and pies at Thanksgiving. I will give just about anything a try. :-)
My favorite family cooking traditions
Birthdays, Thanksgiving and Christmas are a big deal. When my kids were younger I always made their birthday cakes and because of that I got volunteered to make cakes for all of their sports team parties as well. At Thanksgiving, I am pretty much in charge. We usually have around 20 people to feed. It is a big task but I love it. I love baking pies. At Christmas we start a few days early and we have to make all of the traditional cookies and candies. Then we try to do something different for our big Christmas dinner. It is always fun brainstorming and shopping with my sister and sister in law. We have fun with it. It really keeps us close as a family.
My cooking triumphs
I have a few... everyone loves my salsa. I usually give away a jar or two when I make it. One of my friends said her husband ate it all at once! I consider anything I make that makes one of my family members or friends say "yesssss" when I tell them what I made, a triumph.
My cooking tragedies
Had a few of these too! Just the other day I was making carrot cake cupcakes... fail and fell. I was so disappointed. :(

Healthier Baked Pork Chops I
Ok... First of all there is no need to dirty a bunch of dishes. 1. You can dredge the chops in flour in a 1 qt bag then 2. use a 1 gallon bag for the bread crumbs. 3. I drained the oil from the pan I cooked the chops in then added the soup mixture. That way you get all the flavor from the yummy drippings. So you have the bowl from the eggs, the frying pan and the baking dish. Not too bad!:) if you want more gravy, just make a simple gravy with flour and chicken stock then add the soup mixture. My son ate it up really fast! :)
