Chicken Cordon Bleu I

Soooo easy! I used turkey breasts (scallopinied) and had just enough prosciutto on hand to substitute the chicken and the ham. Very yummy.

Chicken Piccata I

Very good. Even the hubby, who "hates" chicken, said it was a tasty change. The only thing I did differently was use white wine with lemon flavor, it being the only white wine I had on hand. Will definitely use this recipe again, but will double the lemon juice and wine because it was so yummy! Thank you for sharing, Allison.

Thanks Kelli for a great recipe. I also did some tweaking: I used ground buffalo that I browned with a little Mrs. Dash, 8 oz can of sauce and a 12 oz can of diced tomato, which I added to the browned meat along with 1-1/2 tsp Italian seasoning and let simmer a bit, covered, while I cooked 1/2 pkg of the elbows. Even the reduced fat cheddar cheese tasted good in this dish! Next time I'll try adding the worcestershire sauce.

Polenta with Roasted Vegetables

I didn't have all the stated ingredients: sustituted mushrooms for the onion and dried basil for fresh; parmesan cheese was all I had on hand, but it all pulled together and was quite good. I will make this again.
