Grandmother's Buttermilk Cornbread

I mixed all the ingredients in a separate bowl and cooked this in a cast iron skillet in the oven. It was great! Thanks for the recipe!

Beef Barley Vegetable Soup

This was very good. I think I'd cook the roast on low for a 8 hours. I'll try that next time. As a tip, I made this yesterday and it's much better today. The meat got much more tender; probably because the tomatoes are acidic and broke down the fibers overnight. This is a keeper.

Raspberry Vinaigrette Dressing

Very simple but tasted great. I used on a salad of mixed baby greens, sliced Granny Smith apple, goat cheese and toasted walnuts. I made for some neighbors and it was a huge hit.

Spinach and Strawberry Salad

This was good, but I didn't enjoy it as much as the spinach and apple salad on this site. The dressing was too sweet. I tasted it before I put it on the salad and added more vinegar. It was very good then.

Jackie's Spinach and Apple Salad

This was very good a nice change of pace. Since I'm low carb, I made raspberry vinaigrette to use instead of the maple syrup. The apples and spinach worked very well together. The walnuts added a nice crunch also. I think I'll use a different cheese than cheddar next time. I like goat cheese or Feta in salads.

Italian Roast Beef I

This was very simple and very tasty. It smells wonderful while it's cooking. As a shortcut, I combined the oil and spices and just rubbed the mixture over the beef before putting it in my cooker.

Spicy Spinach

Based on previous reviewer comments. I cut back on the pepper jack to about 2 ounces and combined it ith 3 ounces of Colby Jack. Spiciness was OK but it needs salt.

Hot and Sour Soup with Tofu

I tripled the cornstarch and it was still a little watery. Also although the sour part is about right if you use 2 tablespoons of vinegar, it's not very hot. I'll have to work on that part. Being creative is part of cooking. I really liked having the red pepper in it. I also added about 5 ounces of button mushrooms that I sautéed. Thanks for giving me a good starting point Ann. This is better than other recipes I’ve tried.

Hot and Sour Slaw

I agree with the previous reviewer that this was WAY too vinegary and not hot at all. Kudos for the idea of using bok choy in a salad. But I'll need to work on this one before I'd serve it to anyone.

Broiled Tilapia Parmesan

This is very simple but delicious. The tilapia is delicate and the sharpness of the parmesan and mayo really carries it. If you use a cookie sheet rather than a broiler pan, make sure that it's strong enough that it won't buckle under the heat of the broiler. I made that mistake the first time I tried this. BTW, the picture is very accurate. I've made this 3 times now and will continue to do so.
