About this Cook
I'm an engineer that has been cooking for many years. Like most folks, it started in the kitchem with Mom. I did most of the cooking for my college roommates which was good because they did the dishes. I've taken several courses at our local community college, but the Food Network has really helped me advance. After watching Emeril enough, now I can buy something at the store that's on sale without knowing how I'm going to prepare it until I get home.
My favorite things to cook
My favorite is the baby back ribs that I have on this site. I've been on the low carb diet for three years (lost and kept off 70 pounds) and love adapting recipes. Thank goodness for spaghetti squash! I used it with leftover turkey this Thanksgiving to make a tetrazzini and it came out great. I use eggplant instead of pasta for lasagna and it's very good. I've always done a lot of curries, Italian, Chinese, and Cajun recipes that required rice or pasta. Now I just use the squash. I also love doing cheesecakes with different sauces.
My favorite family cooking traditions
Turkey for Thanksgiving and Christmas. From my Polish background we always have sauerkraut with the turkey. To me, it's not a holiday without it. At Easter, it's kielbasa with eggs for breakfast.
My cooking triumphs
Several years ago, a friend asked me to cook Italian for a party of 24 at her place. I did everything from scratch; including making the pasta. The menu included several appetizers, Caesar salad, several main dishes and, of course, cheesecake. People told me I should go into business but I told them it was too much work!
My cooking tragedies
I can't remember specifics, but there were several times in the past when we would sit down and start eating and decided we'd better get a pizza delivered. The most recent one was a hot and sour slaw. Even though I followed the recipe exactly (I usually don't) all it tasted like was vinegar.

Grandmother's Buttermilk Cornbread
I mixed all the ingredients in a separate bowl and cooked this in a cast iron skillet in the oven. It was great! Thanks for the recipe!

Beef Barley Vegetable Soup
This was very good. I think I'd cook the roast on low for a 8 hours. I'll try that next time. As a tip, I made this yesterday and it's much better today. The meat got much more tender; probably because the tomatoes are acidic and broke down the fibers overnight. This is a keeper.

Raspberry Vinaigrette Dressing
Very simple but tasted great. I used on a salad of mixed baby greens, sliced Granny Smith apple, goat cheese and toasted walnuts. I made for some neighbors and it was a huge hit.
