Old Fashioned Pineapple Upside-Down Cake

When I first took a bite, I thought it had too much almond extract. But as I ate more of it, the pineapple with the almond extract was wonderful! I had a couple of pineapple slices that didn't want to come out of the pan, but I just used a fork to reposition them on the cake.

Chocolate Cheesecake II

Wonderful chocolate cheesecake. So rich and yummy! I took the advice of other reviews and skipped the topping. Instead, I used caramel topping. This was my first time making a "real" baked cheesecake. It cracked, but that didn't hurt the taste! Next time I make it, I'll try all the tricks to keep it from cracking.

Pecan Pie Muffins

These were wonderful! Gone in minutes at my party. I only used 1/2 c. pecans and 1/2 c. butter. I used whole wheat flour instead of all-purpose flour. Sprayed the mini muffin pan with Bakers Joy and baked for 12 minutes.

Simple White Cake

I made these as cupcakes. I followed all the recommendations to cream the sugar and butter until light and fluffy. They still turned out very dry and heavy.

Mini Meatloaves

I finally found a meatloaf recipe to please the entire family! I make these in muffin pans. My two year old loves that he gets his own little meatloaf. Very easy and tasty!

Monkey Bread I

This recipe is the monkey break that I remember from my childhood! I use a bundt pan instead of a tube pan. I leave out the nuts and raisins. So tasty!

Egg Salad Sandwiches

This recipe was great. I didn't have dill the first time so I omitted it. It was wonderful. The second time I put the dill in. It was too much for me. Next time I'll either leave the dill out completely or use half.

Easy Key Lime Pie I

I took previous suggestions of 4 egg yolks, 2 sweetened condensed milk and 1 c. lime juice. WONDERFUL! It does make more than one pie crust full. I used the mini graham cracker pie crusts to take to work. This version makes enough to fill about 14 of the mini crusts. Super easy for serving.

Sugar Coated Pecans
