Tofu Parmigiana

Talk about a surprising dish! I'm accustomed to destroying a tofu dish, but this was amazing! Just the right mix of herbs. My mom really dislikes tofu but this dish she liked! Next time I'll give it a go with extra firm tofu as opposed to just firm.

Southern as You Can Get Collard Greens

I've always had the worst time making greens. However, this one came out amazin'! I cooked the ham hocks in the liquid for half an hour prior to adding the greens. I also added 1 tablespoon of sugar and half an onion(chopped). Came out quite tasty!

Pan-Fried Asparagus

I used much less butter than was recommended in the recipe, and it all came out quite amazin'! Next time I'll probably just use 1 tp of butter(I used maybe 1 tb this time)--I wouldn't omit it as it adds flavor to the asparagus. I'll definitely be trying this with green beans next.

Japanese-Style Sesame Green Beans

I was soooo tempted to use garlic in this recipe, but then thought it might change the entire taste. I didn't read the reviews prior to making this dish, but next time would think twice about using so much oil. Liked the overall taste of the dish, might need a bit of tweaking with chili oil or red pepper flakes tho'.

Strawberry Vanilla Pancakes

They're definitely good. The pancakes were not thin at all. I had never tried strawberry pancakes and I'll definitely be making them again. I did adjust the recipe, when I added the egg I made sure to beat it pretty well(helped the pancakes not be so thin?), 1/4 tp salt and 3 tb brown sugar(maybe 3.5 tb next time).

Awesome Asparagus Sandwich

Absolutely awesome! Really, an amazing sandwich, I just wish I could find more of these. No meat, yet I was completely satisfied with all of it. The "aioli" used in this recipe was definitely good, sure beats having to make it from scratch. Used provolone instead of swiss cheese. I also pulled a few leaves of fresh basil from my garden to add and used marinated red bell peppers I prepared a few days prior. When I have asparagus, this will definitely be the dish I'll be makin' first!

Artichoke Spinach Lasagna

Made various changes to the recipe. Added ricotta cheese, placed the feta cheese in the middle layer(to avoid dryness up top), and a few others. Would definitely make again, maybe adding another vegetable or using a white sauce.

Soft Oatmeal Cookies

Other than adding walnuts to the recipe no other alterations were made. The first day they were quite yummy but dried out the next. Kept 'em sealed tight in a container-didn't seem to help. Will probably only make a few at a time as they dry out pretty fast. Weren't very "soft" to begin with, more so chewy than anything else.

Caesar Salad Croutons

Didn't add the "ghee" although I did think of adding regular butter, but they were very good without either. I used 2 tb of olive oil and .5 tb of rosemary infused olive oil. I then added dry Greek herb seasoning to the oil mixture. I tossed the bread(used a day-old baguette, no need for toasting) in and baked them on a cookie sheet at 350 for maybe 10 minutes.

Authentic Middle Eastern Hummus (Chummus)

Absolutely the BEST hummus I've ever tasted! No alterations made. Took the author's suggestion of adding lemon juice according to one's preference. I'll definitely make this again! However, I would use a food processor instead of the blender. (on the garlic comment-when I have been to any Mediterranean restaurants, no garlic is added to the hummus)

Sweet Potato Pie I

Very, VERY good!!! I added 3/4 cp white sugar instead of the 1 cup. Tried this recipe to see if it could replace pumpkin pie on Thanksgiving and it definitely will!!

Batter was definitely thick. Added more milk & it watered down the pumpkin flavor. Next time I'll make the recipe as is & spread the pancake batter out w/spatula on pan.

Tofu Sandwich Spread

Exceptional!! Very basic recipe yet the alterations can be endless. Ran out of curry powder(as suggested by one of the reviews), so added dill instead. Can't wait to try it with curry tho'. Also, used half of the mayo the recipe called for and replaced the other half with plain yogurt. I love tuna salad sandwiches but hate to have to wait so long between having them(due to amount of mercury in tuna), this will be a great replacement.

Pupusas de Queso (Cheese-Stuffed Tortillas)

Added salt to the masa as well as some oil(next time I'm thinking manteca de puerco instead). The first few came out pretty dry(why we added the oil). Used queso cotija as one of the fillings, & another mixture of beans and chicharrones.

Chicken Stock

Had no bay leaf, but used fresh parsley instead. Also added a few peppercorns and a garlic clove. The ginger along with everything else smells lovely when cooking. I'll definitely be making this from now on instead of purchasing chicken broth.

Apple Squares

Alterations: used half whole wheat/regular flour, half of the sugar(both brown & white), two cups of chopped apples instead of .5 cups. Smelled amazin' as it was bakin'! I would definitely recommend using 1/2 of the sugar/cinnamon mixture--recipe calls for way too much sugar here as well. Next time I'll definitely be cutting it down & maybe using all whole wheat flour. Twas my first time using whole wheat & I must say it's not bad at all. Also, baked 'em for 35 minutes.
