Raspberry Cream Muffins

Reviewed: Sep. 6, 2009
Oh dear, oh dear, oh dear. Absolutely yummy!!! No changes made, made recipe as is. As muffins they are so moist, I'm thinking I may use this recipe as a cupcake base.

Royal Icing III

I'll use this recipe again and again! Used it to make pacifiers out of lifesavers & dots. A little candy for a baby shower. I did use a tad of pure lemon extract to add a bit of a different taste to the assembled candy. Also when using the egg whites, I made sure to use them at room temp.

Mexican Corn on the Cob (Elote)

Reviewed: Aug. 16, 2009
So yummy! I expected to find this recipe using parm' instead of cotija(would've used cotija either way). Cotija's definitely better if you can find it in your local market.

Banana Banana Bread

Reviewed: Jul. 28, 2009
I didn't have a loaf pan, so I used a regular round cake pan..this called for less time in the oven. I'd also add walnuts or pecans next time I make it.

Vietnamese Salad Rolls

Reviewed: Jul. 20, 2009
Nom nom nom nom! Yummy rolls I've been wanting to make for years. My basil plant's a tad bare so I wasn't able to include any in the recipe. I wanted to use avocados but found mangoes on sale instead. I'll definitely be making these again and again! Although I would recommend having all ingredients set up to go(and chilled) as well as making sure to really wrap these babies up tight.

Needed a quick salsa for a party. Recipe lacked lime, so I added it in. Not very hot so it was gone as soon as I placed on the table!

Broiled Lobster Tails

Reviewed: Jun. 28, 2009
The lobster tails I used definitely needed double the time the recipe called for. It depends on the size of the lobster tails. When melting the butter I threw in minced garlic to add flavor to the butter. I made sure to check the temperature until it hit 175°F. Everything else was followed as the recipe asked.

Radish Top Soup

Reviewed: Jun. 13, 2009
I've been growing radishes and thought it rather sad that I couldn't use the tops(well, there's always compost) in dishes. Decided to see if I could find something here and boy am I glad I did! If you don't have heavy cream on hand, you can always used sour cream. I can't wait to try this during winter, so yummy!

Cucumber Slices With Dill

Absolutely delicious! I tried this at a Scandinavian restaurant in California and I've been searching for a recipe since. Would add a tad less sugar & fresh dill next time.

Yum! Asparagus definitely shrink up, especially if you're using the really thin ones. Good combination w/the rosemary(I used fresh).

Apricot-Ginger Asparagus

Very good glaze. The vinegar adds a nice tanginess to the dish. I'm thinking I may use this with steamed carrots next time.

Asparagus Sandwiches

Reviewed: Apr. 3, 2009
While I've never been a fan of seasoned salt OR canned asparagus, I thought I'd give this recipe a shot. I did use sauteed asparagus(in OO) and it came out very good! I was very surprised with the seasoning salt, added a tasty touch to the mayo. I didn't make the rolled sandwiches, but a regular sandwich. I also used a bit of lettuce in the sandwich as well.

Simple Cauliflower Soup

Reviewed: Mar. 31, 2009
From other users' suggestions, I figured I needed to add something extra to add flavor to the soup. When simmering the soup, I added a rosemary twig but removed it once the simmering was over. Since I freeze a great deal of my soups(for later use), I didn't add the milk. Instead of adding the milk will use heavy cream when it comes to eating it later. Tasted it without any cream/milk, myyyyyy goodness! Definitely good and I'd recommend you use the rosemary! I puree all of my veggie soups, when blending the hot soup make sure to start on low speed and keep the lid slightly open as the hot steam can blow the blender lid right off. Once the blender has started pureeing at a low speed, you can shut the lid and increase speed. I must say it did burn the first time my lid blew off the blender.
