Spinach Manicotti with Italian Sausage

I made this dish exactly to the recipe. It turned out great! Flavorful and very filling! The filling that you stuff the shells with makes quite a bit - I stuffed a whole box of 14 shells ( mind you they were not the large shells) to the brim and I still had about 3 cups of the filling left over. I made a lasagna with the left over and froze it for another meal so not too bad of a problem after all :) ! My suggestion would be to scale down the filling ingredients or make sure to have more shells on hand and buy the larger shells. Perfect recipe for company or a larger group!

Slow Cooker Buffalo Chicken Sandwiches

This is a very nice and spicy dish to fix and forget in the slow cooker until it is done! I did shred the chicken in about 3/4 of the way done. I also used only had half a bottle of the buffalo wing sauce that I had on hand and it still was saucy and spicy enough. We served this chicken up on multi-grain kaiser rolls and enjoyed it quite a bit.

Crisp Marinated Cucumbers

I really liked this recipe. It was refreshing and kind of like a homemade pickle. I used red onion and thought it was still a good balance between sweet/sour. Didn't have celery seed so omitted the salt and used celery salt.

Beaker's Vegetable Barley Soup

Mmmmm yummy delicious soup! I made this today and seasoned exactly as the recipe stated. As far as the additives, I put in the onion, carrot, celery & bareley. I didn't have zucchini but instead used some left over green bell pepper that I had on hand. I used spicy petite diced tomatoes and a six bean mixture as opposed to just garbanzo beans- turned out excellent! A nice hearty warm flavor to compliment and very cold and snowy day! I will definitely make this soup in the future!

Parmesan Sage Pork Chops

Very good recipe for pork chops! It is a quick and easy keeper with great taste! Made this with a homemade mushroom sauce, brown rice and steamed broccoli and it was eaten up in no time! Definitely will make this one again - the sage was a great seasoning to use!

Mexican Casserole

This dish tasted great and I will definitely make it again! Instead of the water I just added extra salsa and no complaints here - the ingredients worked well together and was like a healthier version of a taco. It was a good change in our household from the taco dinners I normally make occasionally using ground beef! It was also very quick and easy to prepare and so little clean up after the meal! We served this with sour cream and next time I am going to add some green/red peppers during the cooking to add a few more veggies and maybe top with some shredded lettuce!

Baked Mushroom Thighs

This was really good! The ingredients worked well together with the chicken thighs. I divided the soup/milk and seasonings in half - used one half for dredging and discarded the left over, and then I used the other half as the sauce. I also added chopped fresh mushrooms to the sauce and bit of black pepper. Other than that, I followed the recipe accordingly and it worked out well!

Simple Slow Cooker Pork Chops

This dish was good and made a hearty stew like meal. I added chopped garlic and black pepper for some extra seasoning and omitted the potatoes. After it was cooked I served it over brown rice with vegetables on the side and it went over well. A good change from a beef stew.

Basic Crepes

Bodacious Broccoli Salad

Great version of Broccoli Salad! I made this as it seemed less sweet than other versions and it was really great. The only substitute was that I used real bacon bits as opposed to cooking bacon strips. I used about 5 Tbsp's of real bacon bits and this worked well. The red onion and red wine vinegar cut the sweetness of the sugar. I served this to someone who had never like broccoli salad for many years and they actually changed their mind about this version!

Sweet Sauce for Vegetables

This was a pleasant surprise - delicious combination as is! Used large mushrooms and green, red & yellow peppers. Left in the mixture for a good day and grilled. Everyone loved it and will definitely use it again!

Breaded Parmesan Ranch Chicken

I made this recipe exactly using strips of chicken breasts. The taste is there for sure and it is really good!! My only little draw back was the butter puddled when it was cooking on the baking sheet and it made me think of fattening the whole time, but I enjoyed the dish anyway! LOL I changed it up with a few of the strips and crushed french fried onions with part of the dressing and parm mixture which was also good. Would definitely like to try again without the butter (flour/egg) and with Ritz crackers! Yummy!

Chococonut Chip Cookies

I am on the fence about this recipe. I made it exactly and using fresh ingredients and thought the batter was a little dense and dry and didn't work like cookies usually do. Possibly scaling down the amount of coconut and flour might have helped. The saltiness also was a bit too much for my liking. I ended up lightly rolling the batter into balls and then flattening them so they would evenly bake. They baked okay and the taste is really good.... they were enjoyed by those who ate them including me, so were still a success.

Magic Cookie Bars from EAGLE BRAND®

We really enjoyed this recipe a lot - just the right amount of sweetness! I think I only used about 1 cup of the chips and 1 cup of the coconut and it still covered the pan evenly. I used chopped raw almonds for the nuts which was a great combination.

High Protein Peanut Butter Balls

Excellent Idea! I am on a restricted carb diet at the moment, mostly pertaining to avoiding the starchy carbs and sugar. I made these with my own spin on them, and they turned out amazing and are definitely okay on my allowed food list! I used 3 tbsp hemp hearts seed in place of the flax. I added in 4 tbsp medium coconut and 1 tsp cocoa powder along with the 100% whey isolate, peanut butter and banana. I only used one banana, one cup of the peanut butter and one scoop of the protein powder. It made 22 balls approximately 1 tbsp each and I entered this recipe into my calorie counter. Turns out each ball contains only a total of 92 calories - 6.8 g fat, 5.5 g carb & 4.1 g protein - very well balanced. I will definitely make these again. THANKS Fit&Healthy Mom!

Mexican Style Corn

Wow this corn packs a lot of flavour and is the best I have had! Yummy! I use chipotle chili powder and usually boil the ears a bit first before rolling them in the sauce, then I place them directly on the grill until slightly blackened. You can use a brush to keep basting them. You can't beat this one!

Mexican Bean Salad

Perfect! I was on vacation and loving the warm weather and felt like fresh Mexican flavors - this salad delivered and then some! I am really quite impressed. I paired this salad with the recipe for Pico de Gallo Quesadilla's from this site. I made it almost to recipe but had a few changes, but I did have fresh cilantro, garlic, lemon & limes on hand! Instead of hot sauce I used fresh jalapeno pepper finely chopped. I also used chipotle chili powder instead of regular and added in some smoked paprika as well, about a tsp. This gave it some smoky depth to offset the tartness from the vinegar lemon & lime. I am definitely taking this to the next office pot luck as I know it will be a hit
