Pico de Gallo Chicken Quesadillas

This was a solid recipe with some great Mexican flavors! I made it exact to the recipe and it turned out great. Quick, easy, fresh & filling! I paired this with Mexican Bean Salad also from this site!

Mexican Bean Salad

Perfect! I was on vacation and loving the warm weather and felt like fresh Mexican flavors - this salad delivered and then some! I am really quite impressed. I paired this salad with the recipe for Pico de Gallo Quesadilla's from this site. I made it almost to recipe but had a few changes, but I did have fresh cilantro, garlic, lemon & limes on hand! Instead of hot sauce I used fresh jalapeno pepper finely chopped. I also used chipotle chili powder instead of regular and added in some smoked paprika as well, about a tsp. This gave it some smoky depth to offset the tartness from the vinegar lemon & lime. I am definitely taking this to the next office pot luck as I know it will be a hit

Zesty Tortilla Roll Ups

I made this recipe and scaled it down to half. I ended up using Dempsters vegetable wraps made with carrot and pumpkin. It turned out really good and flavorful. I used Classico brand Basil Pesto which went well with my choice of bacon and fresh green onions and tomato from the garden! I did use the bacon drippings which helped with the mixing - It was a hit with the office lunch I brought it to!

Absolutely Fabulous Greek/House Dressing

Very happy with this dressing recipe! My hubby loves Greek Salad, so I made Greek Salad tonight for the first time and it went over very well indeed - said it was REALLY good and had a second helping before we ate our steak meal! Thank you for sharing!! I scaled it to 10 servings and it made a lot - will keep just fine in a mason jar in pantry and will definitely use it up. I might just try this out as a marinade for veggies before grilling !

Tropical Grilled Pork Chops

Although I didn't actually make the pork in this recipe, the tropical sauce is incredibly good! I made as per recipe minus the cardamom as I didn't have any - can't complain, this sauce is a keeper. Has some heat with sweet!

Basic Crepes

As a first time making crepes in my life ( I have eaten them just never made 'em) I was happy to say this recipe worked out very well as is! I really liked the taste and texture and will definitely use it again and again - they are just so darn easy to make!

Bodacious Broccoli Salad

Great version of Broccoli Salad! I made this as it seemed less sweet than other versions and it was really great. The only substitute was that I used real bacon bits as opposed to cooking bacon strips. I used about 5 Tbsp's of real bacon bits and this worked well. The red onion and red wine vinegar cut the sweetness of the sugar. I served this to someone who had never like broccoli salad for many years and they actually changed their mind about this version!

Slow Cooker BBQ Chicken

This was a good recipe. I made it as is seasoning wise but used boneless skinless chicken thighs instead. I turned out great and went over well with my other half - I will make it again and make adjustments to make it a bit spicier and a little less sweet - Just personal preference to what we like.

Crisp Marinated Cucumbers

I really liked this recipe. It was refreshing and kind of like a homemade pickle. I used red onion and thought it was still a good balance between sweet/sour. Didn't have celery seed so omitted the salt and used celery salt.

Sweet Sauce for Vegetables

This was a pleasant surprise - delicious combination as is! Used large mushrooms and green, red & yellow peppers. Left in the mixture for a good day and grilled. Everyone loved it and will definitely use it again!

Incredible! Simple easy and delicious!!! Made exactly as the recipe and they turned out fabulous! Definitely a keeper for us...next time will try with some walnuts in the batter but wouldn't change anything else!

Beaker's Vegetable Barley Soup

Mmmmm yummy delicious soup! I made this today and seasoned exactly as the recipe stated. As far as the additives, I put in the onion, carrot, celery & bareley. I didn't have zucchini but instead used some left over green bell pepper that I had on hand. I used spicy petite diced tomatoes and a six bean mixture as opposed to just garbanzo beans- turned out excellent! A nice hearty warm flavor to compliment and very cold and snowy day! I will definitely make this soup in the future!

Parmesan Sage Pork Chops

Very good recipe for pork chops! It is a quick and easy keeper with great taste! Made this with a homemade mushroom sauce, brown rice and steamed broccoli and it was eaten up in no time! Definitely will make this one again - the sage was a great seasoning to use!

Breaded Parmesan Ranch Chicken

I made this recipe exactly using strips of chicken breasts. The taste is there for sure and it is really good!! My only little draw back was the butter puddled when it was cooking on the baking sheet and it made me think of fattening the whole time, but I enjoyed the dish anyway! LOL I changed it up with a few of the strips and crushed french fried onions with part of the dressing and parm mixture which was also good. Would definitely like to try again without the butter (flour/egg) and with Ritz crackers! Yummy!

Simple Slow Cooker Pork Chops

This dish was good and made a hearty stew like meal. I added chopped garlic and black pepper for some extra seasoning and omitted the potatoes. After it was cooked I served it over brown rice with vegetables on the side and it went over well. A good change from a beef stew.

Chococonut Chip Cookies

I am on the fence about this recipe. I made it exactly and using fresh ingredients and thought the batter was a little dense and dry and didn't work like cookies usually do. Possibly scaling down the amount of coconut and flour might have helped. The saltiness also was a bit too much for my liking. I ended up lightly rolling the batter into balls and then flattening them so they would evenly bake. They baked okay and the taste is really good.... they were enjoyed by those who ate them including me, so were still a success.

Mexican Casserole

This dish tasted great and I will definitely make it again! Instead of the water I just added extra salsa and no complaints here - the ingredients worked well together and was like a healthier version of a taco. It was a good change in our household from the taco dinners I normally make occasionally using ground beef! It was also very quick and easy to prepare and so little clean up after the meal! We served this with sour cream and next time I am going to add some green/red peppers during the cooking to add a few more veggies and maybe top with some shredded lettuce!

Creamy Rice Pudding

My sweetie requested that I make this for him, as I have never made it before...loved it! This quick and easy version of rice pudding surprised me how great it tasted as I always thought it was going to be a long process to get that traditional flavor! I followed it exactly and it turned out perfect! My only addition was that I stirred in cinnamon with the butter and vanilla at the end. Mmm Yummy!

Valentino's Pizza Crust

This was a really good crust that baked very well. I will definitely use it again. I made it according to the recipe and cooked it on a baking stone. I brushed the edges of the crust with olive oil after it was dressed. I added a sprinkle of cornmeal onto the preheated baking stone and it did not stick at all - it slid off onto the peel with ease! When the pizza was sliced, you could pick it up and the pizza did not droop at all as the crust was perfectly crispy with a nice golden color. The only part about it was that it didn't have a lot of flavor which could be easily fixed by taking the advise on the recipe and using seasonings on the crust or even in the dough. I only used seasonings atop the cheese so will use seasoning in the crust next time.
