About this Cook
I am a 30 something woman with a wonderful man in my life! We live at the lake and very much enjoy the life - boating, the beach, the stars and anything outdoors - even snowmobiling in the winter! I work in the city and have had the same job for 15 years with the government. I commute about 90 km daily but I always find the time to spend in my kitchen, which is my favorite room in the house! I am almost always tuned into the Food Network and consider myself a bit of a foodie! I always enjoyed cooking and recently have opted for a more healthier style, as I have lost 40lbs since February '12 and plan to keep the weight off at this point in my life! I am always game for a little creativity when it comes to food!
My favorite things to cook
I love to cook savory dishes the most, but I also love to bake. I prefer to grill meat and vegetables of all sorts and I use my outdoor grill almost daily in the summer months.
My favorite family cooking traditions
My mother usually cooks the traditional meals on the holidays, however I hope to start my own traditions in the future - Right now, Super Bowl celebration food is something I do every year where I make a variety of appetizers and enjoy the game with friends and sometimes it's just for the two of us!
My cooking triumphs
I have many dishes that I have mastered on my first attempt - Pumpkin Swirl cheesecake was the most impressive and professional looking cake I have made
My cooking tragedies
I wasn't thinking when I made Greek Avgolemono Soup ( Greek Lemon Rice). It was hot out of the cooking pot and I dumped it into a Pyrex glass bowl that in a split second, a huge pop and it exploded all over my kitchen! Thankfully, no one was injured and not one shard of glass or hot soup landed on me. A tragedy and a miracle! The entire pot of soup was ruined as it was infused with broken glass - it was the best pot of that kind of soup I had ever made, as I sampled it during cooking, and I haven't been able to make it as good since!

Pico de Gallo Chicken Quesadillas
This was a solid recipe with some great Mexican flavors! I made it exact to the recipe and it turned out great. Quick, easy, fresh & filling! I paired this with Mexican Bean Salad also from this site!

Mexican Bean Salad
Perfect! I was on vacation and loving the warm weather and felt like fresh Mexican flavors - this salad delivered and then some! I am really quite impressed. I paired this salad with the recipe for Pico de Gallo Quesadilla's from this site. I made it almost to recipe but had a few changes, but I did have fresh cilantro, garlic, lemon & limes on hand! Instead of hot sauce I used fresh jalapeno pepper finely chopped. I also used chipotle chili powder instead of regular and added in some smoked paprika as well, about a tsp. This gave it some smoky depth to offset the tartness from the vinegar lemon & lime. I am definitely taking this to the next office pot luck as I know it will be a hit

Zesty Tortilla Roll Ups
I made this recipe and scaled it down to half. I ended up using Dempsters vegetable wraps made with carrot and pumpkin. It turned out really good and flavorful. I used Classico brand Basil Pesto which went well with my choice of bacon and fresh green onions and tomato from the garden! I did use the bacon drippings which helped with the mixing - It was a hit with the office lunch I brought it to!
