I've never made pumpkin bread from scratch before, and only once from a packet mix, but oh my word, this is good stuff! Husband is a New Englander and hates pumpkin ordinarily, but gobbled this loaf up. His work colleagues loved it, too! One criticism: I think 3 cups of sugar is far too much, so next time (there will be a next time, there's half a can of pumpkin left!) I will try halving the sugar. I tweaked the recipe a little by omitting the fat and substituting three small tubs of apple sauce, and used orange juice rather than water. I think the addition of vanilla and a little more ginger would also work well, along with walnuts and raisins. It reminded me quite a lot of parkin, which is another fantastically sticky spiced cake with a similar texture, although it does not contain pumpkin.
