Alyson's Broccoli Salad

A very good cold broccoli salad. It is very close to what I sampled at a party during the holidays. A definite keeper.I omitted the sunflower seeds (forgot to buy them). I tried another version- Broccoli Salad from Jennifer Stephens but prefer this one.

Broccoli Salad I

I made this version yesterday- omitting the sunflower seeds. I tried Alyson's Broccoli Salad from this site for Christmas dinner and liked it better. This recipe has too much sugar for my taste and I prefer the milder flavor of the white vinegar over the red. Plus for some reason the green onions were a little overpowering.

Absolutely the Best Chocolate Chip Cookies

The 5 star rating comes from my cookie loving husband. He says they are "rich,dense and buttery, not cakey and light".(Just like he likes them) He didn't mind that they were flat. I added 1/2 cup of toffee pieces (Skor)& used Ghiradelli Double chocolate chips which may have influenced the finished product.I could taste the salt and baking soda.I froze some of the dough and it was good mixed in with vanilla ice cream but I think I will continue my hunt for my "perfect" cookie.

Caramel Shortbread Squares

Oh my! These were very good.I love caramel and shortbread(I could personally be happy without the chocolate).I made them for Christmas.The first few were a little tough to get out and got mangled so I had to eat them...(I couldn't present the mutants to my family)They were so rich that even after 10 or so people had sampled them there was still 3/4 of the pan left & I ended up leaving them at my grandmother's house and couldn't remember where my only 8x8 glass pan was. Next time I will cut them & transfer them to a serving/storage container.I think I'll try it with about 1/2 the chocolate on the top.

Decorator Frosting

I had never made a homemade frosting for my sugar cookies before. I expected with a name like "Decorator frosting that it would be close to a royal icing or stiffer.It is not. This recipe was very good.I halfed the recipe and there was plenty to frost 3 doz. 4" heart shaped cookies. The texture was creamy smooth and not greasy or gritty. I added 1/4 teaspoon of imitation vanilla butter nut flavoring. It added a tiny bit of color and a nice flavor. My husband and two toddlers love them.Thanks!

Coconut Cake III

This is also known as "Rave Reviews Coconut Cake" and is a family favorite. We had it for my grandmother's 76th birthday 2 days ago. (This is the ONLY cake she has requested for decades...) There were only 1-2 slices left and we were celebrating 3 birthdays with 3 different cakes. This is an incredible cake.

Rave Reviews Coconut Cake

This is my grandmother's favorite cake. She says that it is most like the cakes her mother made for her childhood birthdays. This is a wonderful cake. Even those who do not like coconut eat this one. Our family looks forward to this one every March 30th!

Chess Cake

These are really, really, really good. A friend from our Sunday School class introduced us to these cake bars. The class is really into Chess Pie and this was an alternative to the pie. When my husband brought me one home from his Bible Study I HAD to have the recipe. It was a wonderful surprise to find out that he had got it on this web site!

Spaghetti Carbonara II

Hmmmm.... I made this tonight for our new friends. Our first guests in our new home. I wanted to serve something special so I picked this recipe. I am a little disappointed. We all thought it was okay. I am half Italian and my dad used to make Carbonara concoctions often when I was growing up, so I am very familiar with it. I have a recipe in a cookbook that I prefer over this one. I don't think I'll make this particular recipe again. I found this a little bland for my taste, even after the addition of more garlic, salt and pepper, and the cream. Before adding the cream, it seemed very dry. I'm thinking 1 lb of spaghetti is too much pasta in proportion to the sauce?!

Mama D's Italian Bread

Thank you for a wonderful recipe. I made this tonight for some new friends. I selected this bread to complement the Italian pasta dish I served. The bread was definitely a hit. I sent them home with 1 loaf and kept the 3rd for tomorrow. (We want to try it with butter and honey for breakfast.) I am very pleased with this. I had never baked a loaf of Italian bread before. It does remind me of the rustic bread served in one of my favorite restaurants. The only "problem" I had was that it only took about 25 minutes to bake. That is less than 1/2 the time the recipe calls for. I'm thinking that it would have been "toast" if I had baked it that long. This was my first attempt at baking bread and maybe it will be different the next time, but I'm thinking anything baked at 450 degrees for 1 hour would be burned. Also, even after reading some other reviews and adding extra flour, it was still fairly sticky and never did get as smooth as a bambino's bottom. Still, it was REALLY good.

Zucchini Bread IV

This was my first attempt at making zucchini bread. It seemed a tad on the dry side for me. Maybe it will be moister tomorrow?! I also prefer a denser bread, and I agree with an earlier post- it lacks something. (Another spice maybe?) My husband likes it and I will feed it to my 2 toddlers tomorrow.

Fluffy Two Step Cheesecake I

This definitely was easy. I did use 2 pkgs of cream cheese and 1/2 c of sugar. Of course, it doesn't have the same texture that a baked one has. I made a homemade graham cracker crust with crushed almonds and it was good. My husband wanted cheesecake for Easter and this recipe allowed me to fulfill that wish! (And still have the time to prepare the rest of the meal.) We were thinking it would be good frozen and topped with chocolate syrup.:)

Caramel Brownies II

My husband is a brownie lover and he is really enjoying them. I like them too! They are pretty close to the ones my grandmother makes. (Her name of her recipe is "Frownies") I only used 1/2c butter and they still turned out a little greasy for my taste. Next time I will use 1/4c and see how that works. I also took another reviewer's advice and patted down the dough on the top layer to create flat discs. It worked beautifully. The other alteration I made was to sprinkle the nuts into the middle with the chocolate chips (I used milk choc) instead of into the cake mix. We used chopped pecans and I only used 1/4c. Just right for us! Thanks Sandee for the great directions.

Blueberry Dump Cake

This is one of those things that makes you go "MMMMM..." We had been berry picking this past weekend and I used fresh blackberries. It is really good. Did I mention how good it is? I used a Duncan Hines Golden Butter cake mix, added cinnamon and sugar and 1 cup of oats. (Sprinkled on the top of the berries, before the cake mix) I also increased the butter to 1 cup. Would be good with other fruits too. A definite winner.

Carrot Cake IX

This recipe is very close to the one my mom was "famous" for. I used all-purpose flour and did not add baking powder or soda and it is just fine. For those who do not like a lot of "spice", this is a great recipe. I only used 1 teaspoon and it is just right for us. I also did not add nuts this time. Yummy!

Cookie Mix in a Jar III

I used this recipe for the cookie mix in a jar craft this week for our Mothers of Preschoolers group. It went over really well. I made up a batch last night as a "tester" and the cookies are really good. My husband likes them and he is not a fan of Oatmeal Raisin cookies. I have some more in the oven right now! Thanks for a great recipe.

Almond Coconut Chocolate Cake

I made this for a friend's birthday. It is her all-time favorite cake. I made the recipe exactly as written and everyone loved it. I am not a fan of chocolate cake, but I enjoyed it. I used about 3/4 of the coconut mixture and all of the fudge topping. Next time I may substitute a "real" frosting for the top. It is not frosting... it is fudge. Also, I like the idea of halving the recipe for that layer and simply drizzling it on top. Whole toasted almonds might be better "pressed" into the coconut layer. I may try it with a brownie base too. All in all, it is very good. I agree that it is rich and sweet. Thanks Leslie!

Chinese Napa Cabbage Salad

Overall, this is very good. I browned some chicken breast and added it to the noodles, sesame seeds, and almonds in the skillet. There didn't see to be enough dressing for the amount of cabbage I had. (And it was only about 3/4 of the large head...) I added a tablespoon of sesame oil to the dressing. I did not add the dressing to the whole bowl of cabbage and tossed only the amount needed for the meal. I am storing the rest of the chicken/noodles/nuts and the cabbage and the dressing all separately for left overs tomorrow. I love this type of salsd and will continue to try other recipes in order to find the one that best suits our tastes.

Applesauce Cake IV

I am not sure what I expected, but ithis tasted a bit like gingerbread to me. There are too many raisins for my taste. (I like raisins) The cloves are a bit overpowering too. If I make it again, I will cut the cloves down to 1/8t. It is very moist and I like the texture. I will take the rest to my Bible Study in 2 days and see what the ladies think. Maybe I will frost it with some cream cheese frosting and see if that helps...
