Mini Pumpkin Butterscotch Muffins

These are delicious. My 9 yo pronounced them "irresistible". I baked 2 pans of mini muffins and 1 small pan of regular sized.(It made 6- baked for 18 min.)The combination does sound odd, but it is really good.

Cream of Asparagus Soup II

Sour Cream Blueberry Muffins

Really simple to make and they have a nice texture. I topped with turbinado sugar. I think I will add a dash of vanilla or almond exract next time for a bit more flavor. Thanks!

Raisin Bran Chewies Cookies

These are very good. I made a 1/2 batch and used 1/2 butter and 1/2 shortening. A great way to use up Raisin Bran cereal. (I am the only one in my family that likes it and a whole box is hard for me to finish without getting tired of it...) Thanks!

Pumpkin Spice Cookie

Really simple to make. I used a yellow cake mix and added 2T of spices. (1T Pumpkin Pie Spice and 1T Cinnamon) It took a bit longer to cook (12-14 min) due to their larger size. (Small ice cream scoop)Thanks!

Strawberry Pretzel Salad

Delicious. A friend told me about this several yeatrs ago but this was the first time I had tried it. We were delighted with this recipe. Who would've thought that a pretzel crust would be so wonderful?(It sounded a little strange to me...)Thanks!

Garlic Prime Rib

Very good. Our roast was only 3.5 lbs, so I halved the recipe. It was still a little on the rare side after the recipe's allotted cooking time, but I cut the roast in half, let it rest and then put it in the oven for about 5-10 more minutes. It was perfect for us. (Med-rare/Med)

Easy Garlic Broiled Chicken

Mild, savory flavor. I used boneless, skinless thighs. I took other reviewers advice and baked at 375 for about 40 min, basteing every 15 or so. Then, under the broiler for about 5 or so to "crisp" up the top. My family liked it. Thanks!

Slow Cooker Chicken and Dumplings

I combined this and another recipe to make what is an easy and tasty dish. I have had several people ask for my recipe. I added one can each of Cream of Mushroom, Cream of Celery, and Cream of Chicken; used chicken breast meat, added water and broth, seasoned with garlic/garlic salt/powder, dill, parsley, pepper, and salt. The canned biscuits make this so easy and delicious.

Chicken and Dumplings III

I made this as part of a soup bar for an event and had several people ask for the recipe. It is a winner. I did modify it a bit- I used chicken breast meat,one can each of Cream of Chicken, Cream of Mushroom, and Cream of Celery. I also add in a can of broth and some water to thin it out. Added in celery, carrots, and onion. (All chopped and cooked beforehand.) I also like to add some seasonings- garlic and/or garlic salt, parsley, and dill. So easy with the canned biscuits and soups!

Super-Delicious Zuppa Toscana

I made 5 different soups for an event and this was the favorite. I omitted the red pepper flakes, and used fresh kale instead of spinach. This IS super-delicious. Thanks.

Blueberry Muffins II

Good muffins. A little on the dense side for my taste. I prefer a lighter texture. They took about 27 minutes to bake and were still on the darker side. I got 17 muffins out of the recipe. (Normal size) Thanks!

Bananas Foster II

Very good. Very sweet. I used it as a filling in crepes and topped it with whipped cream. Hubby doesn't usually like banana desserts, but was impressed with this. I agree with the other reviewer who think it needs more banana. (Maybe 1 more?)

Mouth-Watering Stuffed Mushrooms

Thanks! These are really good. I halved the cream cheese amt and added some cheddar. Omitted the cayenne. (I am sure it is good but not my family's speed.)Giving this 4 stars because even with 1/2 the amt of cream cheese, there was almost 1/2 the mixture left. Maybe my mushrooms (15 total) were on the small side, but that seems like the porportions are off. I think I will bake a zucchini and use the rest of it up.

Buckeye Balls II

Made a half batch this evening. I think the ratio of powdered sugar to pb might be a tad off. Mine came out very dry and crumbly. They are good though! I also added a 1/4c of rice crispies for some crunch. (The dough was dry before adding the cereal, so I know that wasn't it.)Used Ghiradelli Milk Chocolate and Jif PB. A big hit here at our house!

Soft Pretzels I

These are really yummy! After having the pretzels at the mall for a snack yesterday, I decided to try to make them at home. The recipe I used was very similar to this one. I added a bit more water to the dough, used 4t of baking soda in the water bath and baked them for 12 min at 400 degrees. I dipped some of them in melted butter and sprinkled them with coarse salt. The others were dipped in the butter and then in cinnamon and sugar. I made 12 med sized pretzels out of the batch.

Scottish Shortbread III

I would give this five stars after some additions. I added a touch of vanilla. I halved the recipe,used 1 stick of unsalted butter and 1 stick of salted butter. I also used 1/2 white sugar and 1/2 powdered sugar. (Also upped the sugar by a 1/4) I baked it in a square Pyrex pan for the recommended time and it is wonderful. I am waiting to see what the texture is once it has cooled completely, but right now it is flakey and melt-in-your-mouth yummy!

Basic Crepes

Today was my first attempt at making crepes. I was thrilled to discover it IS easy! My first ones were a tad too thick, but I think if I thin the batter with a little more water, it should be fine. I took the advice of another reviewer and mixed the wet ingredients together first, then added the flour and salt. Since they were going to be topped with raspberry preserves and pawdered sugar, I added a little vanilla and sugar. Thank you so much!
