Simple Garlic and Basil Pesto

It was so easy and quick. I didn't have pine or brazil nuts, so I used sliced almonds instead for crunch. It worked out perfectly. I will definitely be making this again.

This was really easy and quick. It was missing something though, so I added chopped Italian sausage. Really gave the dish a much more substantial flavor.

Easy Chinese Corn Soup

We always ate this growing up, but my mom made it with 1 can creamed corn, 1 can kernel corn drained, 1/2 can water, ham and a two eggs. This got me through college! Thanks mom!

Banana Stuffed French Toast

I used an Italian bread loaf, and a few made with regular pieces of bread, and the Italian bread worked out so much better. I took up another reviewer's suggestion and added cream cheese in the middle. Perfect.

Baked Slow Cooker Chicken

I set carrots, celery and onions on the bottom, and 6 chicken thighs on top of them. 8 hours later the meat was falling off the bone. It was great served with a rice pilaf.

Pumpkin Pancakes with Nutmeg Whipped Cream

These were so good! I only made the pancakes and they turned out so light and fluffy. It was a nice, subtle pumpkin flavor. I substituted honey for sugar and added a teaspoon of vanilla. Perfect. These are going to be a staple.

Slow Cooker Beef Vegetable Soup

This was so easy to make. Everything went in to the pot on low for 7 hours. I used fresh carrots, celery, frozen peas and canned corn. I added 1/4 cup of barley at the last hour. Turned out perfect!

Butternut Squash Soup

This was pretty good, but we made a few changes. We thought the cream cheese was awfully fattening, so we cut that out and replaced it with 3/4 cup of milk. It was still very creamy. After tasting, we added some red pepper flakes and some cumin.

World's Best Lasagna

It was a bit of work, but was worth it. I'd like it to be a little faster to make the sauce, so maybe I'll buy a canned sauce and add ingredients next time.

Turkey Lasagna Roll-Ups

This was a healthy alternative to the usual lasagna. I've made it twice, and I've tweeked the recipe. I cook the onion and the meat together. I cook the noodles according the directions on the box. I combine ricotta, fresh spinach, egg, milk, (the items before are all part of the original recipe), 1 T chopped up garlic, 1T of italian seasoning paste, and a little salt and pepper. I kept the meat and cheese mix separate so it would stay more solid as I rolled. I had to make it for about 15 minutes more than listed, but it turned out great.

Turkey Meatballs in Garlic Sauce

I didn't have all the ingredients, so I subbed. They still turned out fantastic! I subbed soy milk for the milk, bread crumbs for crackers, regular pasta sauce for the V-8 and used dried parsley instead. I also added more 1/2t of cajun spice, a few extra dashes of Worch. sauce, extra hot sauce and used half the salt. Mine were the size of golf balls. For the first 20 min I cooked them on pie pans, after that I put them into a loaf pan for the depth so they could soak in the sauce. I checked every 5-10 min and moved them around. They browned awfully fast. I would lower the temp for this portion slightly. It took 15 min more than the suggested time to cook. Came out perfect, a hit with noodles. The leftovers went perfect for a pasta bake.

Used CandyQuik and definately didn't turn out as well as using reg chocolate. tastes too "soft" with CandyQuik, but it's still sugary good!

Apple Crumble Pie

Blue Ribbon Sugar Cookies

Cranberry Orange Almond Bread
