Butternut Squash Soup II

This was a delicious soup. It's not everyday you can say "that soup was so good, it brought my father-in-law to tears!" I kid you not, he kissed my hand he liked it so much! And my husband and MIL loved it too! For those who might be cooking with butternut squash for the first time, I'll impart some knowledge my aunt passed on to me: if you find peeling raw squash too hard, cut them in chunks and toss it in the broth to boil until it's time to blend them all together. Just pick the now soft squash pieces and use a fork or knife to pick the peel off. And voila! It's much easier and you have less chances of hurting a finger :)

Caramelized Onion with Pancetta and Rosemary Stuffing

I halved the recipe since only 4 would be eating for this Thanksgiving, but kept the same amount of pancetta (because really, there's never not enough bacon!) and sherry. It was delicious! Everyone loved it!

Pull-Apart Hot Cross Buns

Very good! The icing ended up too liquid for me but the little I did put on them before my mom-in-law accidentally threw the rest out was very good. Definitely helps to have a bread machine to do all the mixing.

Carrot Cake III

I made this for my mother-in-law's birthday yesterday. It turned out pretty good! I made the cake the day before and then put the icing on yesterday. Depending on your oven you may want to leave it in longer. I first took it out after 45 minutes and the middle was jello! Another 10+ minutes did the trick though. I didn`t read the recipe and because I didn`t have enough walnuts, I threw in some chopped almonds. For the icing, you can get away with just one cup of icing sugar, maybe 1 and a bit. 4 cups seems like an excessive amount! And if you find it too stiff, you can dash in some milk until you get the consistency you desire. Other than that, this was a good cake! Was liked by everyone who had a piece. :)

Gramma's Apple Bread Pudding

It was tasty! I didn't make the sauce because I didn't feel like making it at the time but I don't see why I'd bother making it in the future seeing as how good it tastes without it. Will go back to this recipe in the future!
