I have a twin sister. Just left an Interior Design career after 8 years, to pursue a massage therapy career. Both are very therapeutic for me, just like cooking!
My favorite things to cook
Cooking says alot about a person. I love bold flavors, Pad Thai is one of my specialities, white chicken chili (which i got from this site), my slow-cooker homemade roast...many more to come! I've been experimenting with this site for years...
My favorite family cooking traditions
My mother worked two job to raise me so we often didn't have time to cook. I think thats why i enjoy being in the kitchen and the process of making dinner so much! She did find time to teach me how to properly set a table at the young age of 14, which i'm so thankful for!
My cooking triumphs
Definitely my mushroom roast which i cook in the crockpot all day, got it from my mother and altered it a little. Also, attempted a Pad Thai recipe from an authentic cookbook that my friends say is one of my best.
My cooking tragedies
I'm known to burn the bread if wine is involved :)....and i love rich and spicy flavor which can sometimes be too much for others

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes
I made this last night! and it was wonderful...the only thing i changed, i made rissoto (the boxed kind but added wipping cream to make really creamy) instead of mashed potatoes w/ bacon, and the texture was great with the chicken and not too overpowering. i also used pre-cut bacon from the salad section (the real bacon, not bacos!), to cut down on the grease and time but this still added so much flavor. Also, i substituted the sour cream w/ the same amount of a sauteed mixture where i added alfredo sauce, wipping cream and freshly chopped garlic cloves...
