Creamy Au Gratin Potatoes

Terrific and easy recipe! My boyfriend loved it! I took the tip to dice the onion and also to uncover the last 20 minutes (although next time wiwll do last 30 minutes) and I used a 2 quart casserole dish that was almost too small. I also used salt, pepper, garlic powder, and cayenne seasoned on both layers of potatoes and used part of cheese sauce in thee middle and the rest on top. I am putting this recipe in my box and will most definitly be making exactly the same way again!! One tiny downside was that I ended up with a lot of butter that settle on top. I'm not sure why, could perhaps be because I had to use lactose free milk?? I just scooped off top though and all was awesome!

Slow-Cooker Corned Beef and Cabbage

I tried using this recipe and cooking corned beef for my first time yesterday. My boyfriend said he always used a pressure cooker for corned beef and that it had been good a few times and bad a few times so I was little apprehensive. However, this was a grand slam!!! I purchased a 3 lb corned beef roast from Sam's Club and we at all but about 1 dinner worth of left overs!!! Details: I did put my crockpot on high for the 9 hours despite reviews saying not too. The corned beef just fell apart perfectly. Next time I will not add potatoes or carrots until about 4 hours in and I will add cabbage about 1 1/2 hours before (probably because it barely fit in my crockpot it took a bit longer to cook)...I also took tips on adding a few beef bullion cubes and added more corrinder, mustard seed, peppercorns, and some garlic powder. I just had a 24 oz budweiser and used about half of that. I have a ton of leftover cabbage and will be using it with kielbasa tonight. Another great tip from a reviewer was to make the "Creamy horseradish and garlic spread" for the corned beef!! It is on this site and to die for!! For horseradish lovers add a little extra:)

Wow!!!! This is the best!!!! Used it the first time with corned beef. Sure I'm going to add it to many dishes to come!!! We love horseradish so I did double that part but overall awesome!!

Kielbasa Cabbage Skillet

This is a great change from my normal kielbasa and sourkraut. I added red pepper instead of green and used spicy seasonings to give it a zing. Very good.

Easy Slow Cooker Chicken Tetrazzini

Loved this dish! Tweaked it a bit as follows: Used 3 very large chicken breasts, used a pinot grigio, added garlic powder at end (will add fresh garlic in the beginning next time), due to time I did high for 1 hour, low for 2, and back to high when adding cornstarch and mushrooms. Added 1 extra teaspoon of cornstarch and left on high for another hour before adding spinach fettuccini (12 oz bag). The chicken broke up and was so tender! The flavor was wonderful!

Fiesta Chicken and Black Bean Enchiladas-dup

These are sooooo good. My all time favorite spin on enchiladas now!! A co-worker said I had to try this and boy am I glad I did! The fresh cilantro gives it such good flavor....I went right by this recipe other than using canned chicken so no need to cook chicken in broth.

Slow Cooker Lentil and Ham Soup

Well all I can say is that I appreciated all the reviews and don't understand ANY of the negative reviews. I had a lot of ham leftover from Christmas so I doubled this recipe and used a 7 quart crock pot. I added about 4 1/2 cups ham (with the ham bone), 2 cups or 1 bag (16 oz) of lentils, 1 frozen block of spinach, a can of tomato sauce, 2 cans of diced tomatoes, tobasco sauce, no extra water, chicken bouillon instead of broth, and went by the recipe the rest of the way. I had a honey baked ham that wasn't salty to begin with and did not have any problem with salty flavor. This soup is delicious! For sure saving and using for leftover ham again!! Like many others I changed my cooking time as well. I cooked on high for 7 hours and low for 2. No vegetable turned to mush and the lentils were cooked perfectly.

Best Butternut Squash Soup Ever

This was a great recipe!! I had a leftover 1/2 large roasted butternut squash and used potatoes and carrots leftover from a roast I had cooked in the crock pot. I read reviews and took the tip to add half the amount of chicken stalk and milk for the rest. I boiled onion and celerly on stovetop with a bit of butter, the chicken stalk, bouillon and tyme. Great and EASY recipe!!

Mushroom Meatloaf

Adding mushrooms to meatloaf was something I had never done. I am however a mushroom lover so went for it. I minced all the mushrooms and found that you really couldn't taste them but they were a great additive for moisture I think! I added twice the amount of onion, some A1 and McCormick Steak seasoning (rather than salt and pepper). I also used some wheat ritz crackers and crushed sage garlic stuffing croutons rather than standard bread crumbs. I also used a glaze recipe from another meatloaf recipe on this site. 1 cut ketchup, 1/2 cup brown sugar and worcestershire. Delicious. My boyfriend said it was the best meatloaf he's ever had and asked if I was sure to keep my recipe this time (as my meatloaf seems to change every time) This time I have it all down in my notes and will do the same again and again!

Homestyle Stuffed Peppers

This is definitley one of the better stuffed pepper recipes I've used. I went by the recipe this time but next time may add some of the yummy tomato sauce blend inside my mix. I will use this recipe again for sure. BTW 1 1/2 lbs of beef stuffed 5 peppers full for me.

Rosemary Ranch Chicken Kabobs

What I liked most about this is that the chicken was so moist and tender! Didn't dry out at all! A little too much rosemary for our liking but was still really good! I think perhaps because I basted with the leftover marinade it made the rosemary stronger (and I only had dry not fresh)....would have been better most likely if I wouldn't have done that.

This recipe was good, quick, and easy. The only reason I gave 4 stars is because I would have liked a little more egg.....next time I will cut down on my chicken and spinach to allow for a thicker egg coating on top.
