Cherry Pineapple Cabana Dump Cake

This was good but not stellar. I think there is too much coconut (which is surprising). Tasty and super easy but not award-winning.

Blackberry Spinach Salad

OMG! This is worth 8 stars, though I opted to use dried cranberries instead of cherry tomatoes and goat cheese instead of feta. Since I doubled the recipe, I used 3 green onions, some romaine with mostly spinach, and 1 1/2 pints of blackberries. I served it with a peach balsamic vinegar that I had and mmmmm.....SO good and beautiful too!

Sesame Noodle Salad

Frog Eye Salad

I don't know. Most people passed it over at the picnic and though it as colorful and sweet, the kids felt that it had a weird texture with the pasta element. Not gluten free, though a friend almost ate it because it looked like a fruit salad.

Cranberry Brisket

This was excellent! Super easy. Cooked for 6 hours on high in the crockpot and used whole berry cranberry sauce instead of fresh berries. Served over mashed potatoes. Really good and easy. 4 lbs serves 8.

Black Magic Cake

The best deep chocolate cake I have ever eaten. Does not taste like coffee nor buttermilk. Made as a bundt cake. 40 min. Perfect.

Easy Chicken Satay

Easy and good. Doubled the amount of chicken for 16 skewers (2-3 per person). Single amount of marinade and there was PLENTY of the single-batch of sauce for even half-again as much chicken. Light meal. Serve with coconut rice.

Very good. Super easy. I used frozen strawberries so I did not use the ice at all. The thickness was just perfect. I also modified with a Tablespoon of powdered vanilla and 1/4 cup of sugar, since I used tangy plain yogurt.

Easy Raspberry Chicken with Coconut Rice

Flavorful chicken. Rice needed salt or less water or both. It was a little "crumbly" even from the rice cooker, but the coconut flavor was just right. It just needed "something". Not really a sauce for the combo but still a suitable match.

Banana Cake II

This was delicious. Like a sponge cake! Mixed the butter and sugar first, then added the other ingredients as per the recipe. Cooked for 35 minutes with parchment. Frosting was a Cream Cheese Frosting with a overripe banana added.

Super-Delicious Zuppa Toscana

Wonderful soup. I doubled the recipe for our larger crowd and used half turkey Italian sausage and half normal sweet Italian sausage. I rinsed the sausage per the recommendations and sliced the potatoes in two thicknesses. I also used kale (my first time), which was SO much better than globs of wilted spinach.

Orange Gelatin Salad

I liked this a lot. I made it with the heated fruit juice, but after serving some, it became quite liquified. Next time I will just add the powder to the fruit and go from there. Liked the flavor though and the cottage cheese was fine.

Big hit! Used full sugar (didn't seem TOO sweet but I may alter it in the future), frozen berries and the leavening combination listed. Rose up nice and fluffy and delicious!

Congo Bars I

I liked these a lot...too much even! I used half butter, half margarine and 1 full cup of coconut. I had to cookie longer; 25 at 350, then turned down for another 15-20 at 325 because it was browning too much on the bottom. Mmmm. Warm, they are irresistible!
