Lentil Soup with Lemon

Being from Spanish heritage, I love a good lentil recipe. This definitely lived up to my expectations! It was delicious, flavorful and easy to put together. Thanks for the recipe!

Spicy Chicken Thai Soup

This soup was great! I used two cans of light coconut milk and chicken breast and I don't think it compromised the flavor at all. The supermarket ran out of red curry paste so I used green. I did not get the level of spice that the recipe predicted (or that I wanted) so I added two jalapenos instead of one. Overall this soup was delicious. I served over rice noodles.

Butternut Squash Soup with a Kick

This soup is delicious! Perfect for fall. I also roasted the squash beforehand, used 2% evaporated milk and low fat coconut milk and the richness is perfect. No need for sour cream! I'm not known for being the best cook but anyone can do this. Enjoy!

Chicken with Chipotle

This was delicious and easy. I took a tip from another reviewer and sauteed the chicken with half an onion and about 4 cloves of garlic. I added three peppers instead of two with a hefty dose of Adobo and it was just spicy enough. Served over rice with a salad and warm tortilla. Thank you for the recipe!

Honey Baked Chicken II

This was delicious!!!! And so easy. I subbed olive oil for butter and it was great - tasty and so tender. I paired with brown rice and sautéed veggies. Healthy, tasty and so easy!

Sweet Potato Chili

Really tasty chili. I made a few small changes: I used three cans of Rotelo diced tomatoes and green chiles, one diced/seeded jalapeno, two cloves garlic and a tablespoon of brown sugar. I garnished with cheddar and low fat sour cream. A unique take on chili that I will definitely use again. Thank you for the great recipe!

Chicken Fricassee

This was a tasty dish. I halved the recipe, used chicken breast tenders (so it would cook faster) and low fat spicy turkey sausage. I also used chicken broth instead of water. The spice level was hot, but not too hot for us! I will say that the recipe was lacking something. If I cook next time, I may add peppers at the end for some crunch. All and all a good recipe for a first time Cajun cook. Thank you!

Slow Cooker Buffalo Chicken Sandwiches

I used one 12 oz bottle of wing sauce, 4 chicken breasts and 1/2 poutch of ranch mix. I mixed it all at the beginning, no butter or extra sauce at the end. I served w/ blue cheese dressing, toasted bun, shredded cheddar and lettuce. It very good. Thanks for the recipe!

Roasted Red Pepper and Tomato Soup

This soup was great! I roasted the peppers and onions (per another reviewer's suggestion), used two cans of diced tomatoes and just one can (about 2 cups) of vegetable broth. I also doubled the spices, garlic and finished by adding half and half at the end to desired taste. Garnished with croutons. YUM!

Cranberry Sauce I

This recipe was GREAT! Not to sweet or too tart. I took another reviewers advice and did 3/4 cup OJ, 1/4 cup water and did 1/2 cup white and 1/2 cup brown sugar. I also added about 1/4 teaspoon of cinnamon and I highly recommend that too. Delicious and easy!

Oatmeal Chocolate Chip Cookies I

These were good. I didn't have shortening so I used butter. I added a little extra flour and oats as well as 1/4 tsp cinnamon. Though I wish I had added more than that! Thanks for the recipe!

Delicious Ham and Potato Soup

I don't know why I have overlooked this recipe for years because I assumed it wasn't as good as the reviews stated. Boy was I wrong! This recipe was outstanding and a great use of leftover holiday ham. I added about a cup of chopped baby carrots, extra onion, a few cloves of garlic. I also took the recommendation from other users and added a little cheddar cheese. I omitted salt as the ham and chicken bouillon made it salty enough. Delicious, simple ingredients, easy to make!!!

Balsamic Roasted Pork Loin

I liked this recipe and followed it, but also added garlic to marinade and onions and sweet potatoes in the roast. I really liked it, but wasn't blown away - perhaps I got high expectations due to the other reviews.

Simple Scones

This recipe rocks! So simple and quick and were a big hit at my baby shower. Agree with others that without a food processor this would be more difficult. One slight change after making one batch is that I moved the tray to the center rack. Thank you I will definitely make these again!

Slow Cooker Beef Stew IV

This recipe was good. A bit of prep work but worth it for the delicious, tender meat. Though I'd say don't forget garlic, that's a serious omission! Otherwise something was missing... Bay leaves or maybe more wine. Will make again, thank you for the recipe!

Spiced Butternut Squash Soup

This recipe was good. Based on reviews, I subbed apples for potatoes and tripled the spices. Unfortunately I had no sherry and I will make sure to add it next time as something was definitely missing. I also sprinkled cinnamon on the leftovers and it definitely enhanced the flavor, so add cinnamon! Rice & Beans (Haitian Style)

Really good. I used canned beans and 2 cups chicken broth instead of bean water. Agree with other reviewers, it was way too salty (I used low sodium broth) and probably will go 1/8 tsp on the cloves next time. Otherwise this smelled wonderful, tasted great and was a perfect complement to our BBQ-ed Jamaican Jerk chicken. Thanks!

Red Velvet Cupcakes

These were good! The cake itself was amazing, moist and delicious. The frosting was good but I struggled with the consistency, as it was drippy and gooey, rather than light and fluffy, which I was hoping for. That may just be the reality with cream cheese frosting but maybe others have tips for how to improve this going forward. Thank you for the recipe!
