This was the first time making quinoa and I have to say this recipe is AWESOME!!! LOVE! LOVE! LOVE! LOVE! LOVE! The proportions and flavors are great, and I only changed the directions slightly. I used one can of organic black beans (Publix brand), added the zest and juice of one lemon, half a can of gluten free diced spicy red peppers by Hunt's, and a couple of dashes of Sazon Completa. Make sure you rinse your quinoa!!!! Otherwise this might come out very bitter. I actually soaked my quinoa for about 10 mins (the length of time it took me to chop up the onions and garlic and sautee them). Also, hold back your garlic until your onions are at least halfway done or it will burn, and throw in the quinoa shortly after. Toasting it lends amazing flavor. Otherwise, I followed the recipe to a T. Enjoy!!! I hope you love it as much as I do! =)
