Quinoa and Black Beans

This was the first time making quinoa and I have to say this recipe is AWESOME!!! LOVE! LOVE! LOVE! LOVE! LOVE! The proportions and flavors are great, and I only changed the directions slightly. I used one can of organic black beans (Publix brand), added the zest and juice of one lemon, half a can of gluten free diced spicy red peppers by Hunt's, and a couple of dashes of Sazon Completa. Make sure you rinse your quinoa!!!! Otherwise this might come out very bitter. I actually soaked my quinoa for about 10 mins (the length of time it took me to chop up the onions and garlic and sautee them). Also, hold back your garlic until your onions are at least halfway done or it will burn, and throw in the quinoa shortly after. Toasting it lends amazing flavor. Otherwise, I followed the recipe to a T. Enjoy!!! I hope you love it as much as I do! =)

Fluffy Two Step Cheesecake II

OMG! this recipe is awesome! i used 8 oz of the 1/3 fat free cream cheese along with 3 oz the fat free cream cheese. i substituted splenda for the confectioner's sugar. make sure the cream cheese is at room temperature first. then i used a mixer on low-medium setting to blend the cream cheese and splenda. when it was nice and creamy, i folded in the lite cool whip. then i spooned that into the low fat graham cracker pie crust, but instead of putting it in the fridge, i put it in the freezer for about 4 hours. then i took it out and placed it in the fridge. the cheesecake was nice and firm and tasted great! thanks for the recipe!

Szechwan Shrimp

great recipe! didn't really change a thing besides tripling the sauce and adding a bag of fresh veggies (broccoli, snow peas, and carrots). i began with the scallions and garlic in oil first. then i added the shrimp and let them cook for several minutes. meanwhile, i steam the vegetables in a different pot. by the time the shrimp is cooked, the vegetables should be done. i strain the vegetables and then add them, along with the sauce, to the shrimp and garlic and scallion mixture. i served it over brown rice. perfect!

Trinidad Stewed Chicken

I made this last night and WOW! My picky boyfriend LOVED it even though neither of us is particularly crazy about coconut. That said, I pretty much followed the recipe to a T. The only alterations I made was I used 1 pound of boneless chicken breasts, a little less coconut milk, added several more tablespoons of ketchup, and added crushed pineapple bits to the dish at the very end. I found a can of it in my pantry and thought....mmmmmm....coconut and pineapple. Those 2 things go together right? AMAZING! It added just enough sweetness to the spiciness of the dish. I will definitely make this again.

Chicken Caesar Pasta

This recipe was AWESOME and very easy! My boyfriend gave it 10 out of 10 stars. I did do a few minor changes though: I marinated the chicken in Wishbone's Italian dressing for 3 days before cooking it. Instead of grated parmesan cheese, I used the shredded parm cheese that comes in a bag. And instead of caesar dressing, I used homemade italian dressing that I purchased from my neighborhood pizzeria. I also used romaine salad in a bag instead of a head of lettuce. Bon appetit!
