About this Cook
I am the mother of a 5 year old, very active little boy that LOVES to eat. My partner also loves to eat so I am kept quite busy in the kitchen and love every minute of it. Making people smile with my cooking is just amazing!
My favorite things to cook
First of all, I love to try new things. I am always looking for the next best recipe that will "wow" people. My favorites (and most requested!) include enchiladas(chicken and beef), guacamole, salsa, spaghetti, Asian stir fry (chicken and pork), oven fried chicken, cream cheese stuffed chicken breasts(BIG hit and number 1 favorite at home), slow cooked roast, ranch burgers, and squash casserole(another big hit that I got from my mom).
My cooking tragedies
My first homemade spaghetti sauce at the age of 12! It was so acidic and just tasted awful.

Baked Teriyaki Chicken
This is a number one favorite at our house! So juice, tender, and delicious. The only thing I do different, and boy does it make a difference, if make a double batch and I marinade my chicken in a tightly closed zip lock pack (flipping over periodically) for 2 full days. Then I cook it exactly as the recipe calls for. I have tried this recipe with and without marinading the meat and I have to say that when it is marinated, it is 10 times better! Thank you so much for this recipe! We love it with steamed broccoli and carrots with a little sauce added after the steaming process and some homemade fried rice. Delicious!

Cathy's Banana Bread
Best banana bread ever! I just added some finely chopped pecans to the batter and sprinkled some on top before baking. This was a huge success! Thanks, Cathy.
